金银花·菊花·甘草复合保健凉茶饮料的工艺研究

摘    要:目的]探讨制作金银花、菊花、甘草复合保健凉茶饮料的最佳工艺条件。方法]采用正交试验分别获得制备金银花汁、菊花汁、甘草汁时的最佳浸提条件,以金银花汁、菊花汁、甘草汁、柠檬酸、白砂糖含量为因素,以产品的外观、颜色、气味、口感等感官评分为指标,通过正交试验,得出该复合饮料的最佳配方。结果]金银花最佳浸提条件为加水量40倍、温度90℃、时间30min;菊花最佳浸提条件为加水量60倍、温度90℃、时间30min;甘草最佳浸提条件为加水量10倍、温度90℃、时间4h。该复合保健凉茶饮料的最佳配方为:金银花汁20%、菊花汁15%、甘草汁10%、白砂糖10%、柠檬酸0.12%。结论]该产品呈金黄色,均匀一致,口感爽口,具有金银花、菊花和甘草的天然风味。
