摘    要:为全面了解张掖市内不同作物中的营养物质,打造高营养特色农作物种植示范、注册张掖市有机特色农副产品商标。本研究对张掖市富硒带29个作物品种中的蛋白质、脂肪、淀粉、粗纤维及维生素、矿物质、脂肪酸、必需氨基酸与非必需氨基酸等多种营养物质含量进行测定分析,并用主成分分析法,对其营养成分进行比较,筛选出品质优良的作物。结果表明:各作物中蛋白质、脂肪、淀粉含量较高,粗纤维含量较低。‘胡麻2’中蛋白质与脂肪含量均最高,分别为25.30 g/100 g、40.10 g/100 g,种皮小米中四种总维生素含量最高,为721.08 g/100 g。黄参中三种总矿物质含量最高,为3.7×10~3g/100 g。几种脂肪酸总含量最高的作物为甜糯玉米,含量为98.00 g/100 g。必需氨基酸与非必需氨基酸总含量最高的作物分别为几种胡麻与黑小麦,总含量分别为5.34 g/100 g、10.22 g/100 g。29种作物中营养成分存在较大差别,黄参、‘胡麻1’、‘胡麻2’、‘胡麻3’、‘琉璃苣1’等这5个作物的品质得分最高,具有较高的营养价值,是较优良的食用作物。

Abstract:Determination an d analysis of various nutrients such as protein, fat, starch, crude fiber, vitamins,minerals, fatty acids, essential amino acids and non-essential amino acids in 29 crop varieties in Zhangye City.Principal component analysis was used to compare the nutrients and select good quality crops. The results showed that the content of protein, fat and starch in each crop was higher and the content of crude fiber was lower. The content of protein and fat in ’flax 2’ was the highest, which were 25.30 g/100 g and 40.10 g/100 g, respectively. The four total vitamins in ’seed coat millet’ were the highest, which was 721.08 g/100 g. The three total minerals in Sphallerocarpus racills are the highest, which is 3.7×10~3 g/100 g. The crop with the highest total fatty acid content is sweet waxy corn with a content of 98.00 g/100 g. The c rops with the highest total content of essential and non-essential amino acids were several flax and black wheat, respectively, with a total content of 5.34 g/100 g and10.22 g/100 g, respectively. There were significant differences in nutrient composition among 29 crops. Five crops such as Sphallerocarpus racills, ’flax 1’, ’flax 2 ’, ’flax 3’ and ’borage 1’ had the highest quality scores and high nutritional value, which was a better edible crop.
