摘    要:目的]对紫苏(Perilla frutescens)的挥发性成分进行分析。方法]用同时蒸馏萃取(simultaneous distillation-extraction,SDE)和气相色谱-质谱联用(gas chromatography-mass spectrometry,GC-MS)研究紫苏的挥发性成分。结果]一共鉴定出44种挥发性成分,其中醇类7种,占总含量的3.96%;醛类3种,占总含量的2.63%;烯烃3种,占总含量的0.67%;酮类1种,占总含量的1.61%;酚类3种,占总含量的0.74%;酯类5种,占总含量的2.69%;酸类3种,占总含量的1.22%;芳香族6种,占总含量的25.37%;萜类13种,占总含量的61.02%。结论]紫苏的挥发性成分中既有具风味的挥发性成分,也有具药效的挥发性成分。

Abstract:Objective]To analyze the volatile compounds of Perilla frutescens.Method]Using simultaneous distillation-extraction and gas chromatography-mass spectrometry to analyze the volatile compounds of P.frutescens.Result]A total of 44 volatile compounds were identi-fied,which 7 species were alcohols,accounting for 3.96% of the total content;3 species of aldehydes,accounting for 2.63% of the total con-tent;3 species of olefins,accounting for 0.67% of the total content;1 species of ketones,accounting for 1.61% of the total content;3 species of phenols, accounting for 0.74% of the total content;5 species of esters, accounting for 2.69% of the total content;3 species of acids, ac-counting for 1.22% of the total content;6 species of aromatic, accounting for 25.37% of the total content;13 species of terpene, accounting for 61.02% of the total content.Conclusion]The volatile compounds of P.frutescens contain volatile compounds and volatile medicine com-pounds.
