| 燕山板栗和太行山板栗品质差异的研究 | |

| 摘 要： | 从外观品质、营养品质和风味品质对燕山板栗和太行山板栗品质的差异进行研究。结果表明，燕山地区和太行山地区的板栗品质间存在显著差异，主要表现在燕山组的板栗单果重、还原糖、矿质元素Zn，Cr含量明显低于太行山组，而燕山组栗果中的蛋白质、矿质元素P，Cu含量明显高于太行山组。 |

| Abstract: | The difference of the chestnut qualities between Yanshan and Taihangshan areas was studied, that offered a theoretical basis for the storage of the Chinese chestnut, acquisitions, breedings of genetic resources and the scientific management in the further. Multivariate analysis of covariance was used to study the difference of the chestnut qualities between Yanshan and Taihangshan areas were researched by comparing appearance, nutrient and flavor quality. The results showed that the difference was not significant between the qualities of the seedling chestnut and cultivated varieties. There were remarkable differences between Yanshan and Taihangshan chestnut quality. The differences manifested that weight per nut, reducing sugar, the content of Zn and Cr in Yanshan chestnuts were lower evidently than Taihangshan chestnuts. And the content of protein, P and Cu in Yanshan chestnuts were higher evidently than Taihangshan chestnuts. There was a significant difference of Zaofeng and Banhong chestnut between Taihangshan and Yanshan areas in the weight per nut, reducing sugar, protein and the content of Zn , Cr , P , Cu. |
