摘    要:目的]掌握陈化前期三明烟叶与遵义烟叶的化学特性。方法]取三明和遵义C3F等级烟叶在实验室内陈化,研究其化学成分的变化情况。结果]两地烟叶的总氮、烟碱和挥发碱含量都在前3个月下降,中间3个月上升,后3个月继续上升或保持稳定;总糖和还原糖含量的变化趋势均与含氮化合物的变化趋势相反。三明烟叶的总氮、烟碱、总糖、还原糖和挥发碱含量以前3个月的变化幅度最大,且明显大于遵义烟叶同期变化;遵义烟叶的总氮、总糖、还原糖含量以中间3个月的变化幅度最大,挥发酸、挥发碱和烟碱含量以最后3个月变化幅度最大。结论]陈化前期三明烟叶的化学成分变化早,醇化速度明显快于遵义烟叶。

Abstract:Objective] The aim of the study was to master the chemical characteristics of Sanming and Zunyi tobaccos in the early aging stage.Method] Sanming and Zunyi tobaccos of C3F grade were selected for aging in laboratory so as to study the changes of their chemical compositions.Result] The contents of total N,nicotine and volatile bases in the tobaccos of the 2 places were decreased in the first 3 months,increased in the middle 3 months and went on increasing or kept steady in the last 3 months.The changing trends of total and reducing sugar contents were all opposite to that of N compounds.The content changing ranges of total N,incotine,total sugar,reducing sugar and volatile bases in Sanming tobaccos were biggest and significantly bigger than that in Zunyi tobaccos in the first 3 months.The content changing ranges of total N,total and reducing sugars were biggest in the middle 3 months and that of volatile acid and bases and nicotine were biggest in the last 3 months in Zunyi tobaccos.Conclusion] The chemical composition of Sanming tobaccos in the early aging stage changed early,with alcoholization rate significantly faster than that of Zunyi tobaccos.
