低温脱脂豆粕中大豆分离蛋白提取工艺的研究

摘    要:采用碱提酸沉法,进行低温脱脂豆粕中大豆分离蛋白提取工艺的研究。通过单因素实验和正交实验,确定了一次碱提的最佳工艺条件为:液固比为10∶1,碱提pH值为9.0,碱提温度为50℃,碱提时间为50min;通过单因素实验确定了最适的酸沉温度为45℃,酸沉pH值为4.6。最终蛋白提取率可达79.36%,蛋白含量为90.1%。

Abstract:Using the way of alkaline extraction and acid precipitation to extract the isolated protein from soybean meal,the process of extracting was studied. The optimum conditions of first alkaline extraction:the ratio of solid and liquid 1∶10,the temperature of extraction 50 ℃and the extracing time of alkaline 50 min are obtained by both single factor experiment and cross experiment. Then by the single factor experiment,The optimum conditions of acid deposition:the temperature 45 ℃,pH 4.6 were determined. At last,the maximum of extrasting ratio is 79.36% and the protein level is 90.1%.
