Abstract:The effects of electron beam irradiation on fresh-keeping of Agaricus bisporus was studied after sporecarp samples were irradiated at 1.0, 2.0, 3.0 and 4.0kGy and then stored at 4℃ for 14d. The contents of water-soluble vitamins, amino acids and sugars were measured. Results showed that the contents of water-soluble sugars, amino acids, and aneurin, lactochrome, nicotinic acid in sporecarp did not significantly change after irradiation. However, asoribic acid was sensitive to irradiation, and the content was significantly reduced 31.1% at the dose of 4.0kGy. It is concluded that 2kGy irradiation can effectively prolong the shelf life, and almost no significant effect on the nutrient components of Agaricus bisporus.
