闽西北山区黄牛的体型结构与肉用性能的研究

摘    要:近两年来,我们对闽西北山区黄牛体型结构与肉用性能作了研究,结果表明:闽西北山区黄牛体格比江苏平原区荡脚牛及闽南龙溪黄牛显著矮小,役力差。但从其体型相对发育上看,则表现为四肢发育较长,胸宽、胸围指数较大,说明其相对步幅大、步速快、心肺发达、肺活量大,既有利于山区劳役、又具有持久力。加以尻部基架发育较好,有利于附着肌肉和推进力,故具有向役肉兼用或肉用方向改良的基础。据对8头山区黄牛的屠宰测定,其屠宰率平均为44.01%,净肉率为30.94%,肉骨比为2.41:1,每头牛平均产肉量仅为59.41公斤,约需17头才能产肉1吨。鉴于山区黄牛体格小,役力差,产肉量低,不能适应国民经济和四化的需要。因此,尽快开展黄牛改良工作是当务之急。我们根据山区环境条件及黄牛体型结构的特点,提出今后改良方向等问题供商榷。


AN INVESTIGATION ON CONFORMATION AND BEEF-PRODUCING ABILITY OF THE YELLOW CATTLE IN THE NORTHWEST MOUNTAINOUS AREAS OF FUJIAN PROVINCE
Abstract:An investigation on conformation and beef-producing ability of the Yellow Cattle in the Northwest mountainous areas of Fujian Province was carried out during the past 2 years.The results show that the body size of these cattle is significantly smaller and lower in comparison with the Dang-zias Cattle and the Longqi Yellow Cattle of plain areas. In view of the relative development of their conformation, the legs are comparatively long, the chest is broad and the heart girth index is relatively high. All of these features are helpful to take on hard-work and to possess endurance.In addition, the frame of rump is well-developed? which is profitable to the attachment for muscles and to creating pushing power.Therefore, they have the basic conditions to be improved for both working and beef-producing purpose or for beef-producing purpose specially. According to the slaughter tests on 8 Mountain Yellow Cattle, the av-eragge carcase yield is 44.01%; the average dressing percentage is 30.94%; the ratio of meat and bone is 2.4: 1 and the average meat yield of each cattle is only 59.41 kg. About 17 adult cattle are required to produce 1 ton of meat. On accout of the small body size, poor working eapacity and low carcass yield, the Mountain Yellow Cattle can not be kept to meet the needs of agricultural modernization and the development of national economy.Consequently, it is urgent to improve them right now. Based on the environmental conditions of the mountainous areas and the characteristics of these cattle, some questions such as the direction of improvement and others are presented and discussed.
