摘    要:"食品工程原理"是食品科学与工程领域各专业必修的一门主要专业基础课。在倡导"以学生为中心"的教育背景下,针对教学过程中"食品工程原理"课程的特点,提出了加强"食品工程原理"的重点和难点内容课件制作、发掘重点和难点内容的工程应用背景、提高与学生的互动频率、学生批判性思维的构建、对部分实验改革性教学等措施,以期激发学生学习的自主能动性,提高"食品工程原理"的教学质量。

Abstract:Food Engineering Principle is a fundamental course for the students who major in Food Science and Engineering related specialties. In advocating the student centered educational background,according to the characteristics in the teaching of food engineering principle, some viewpoints were raised for motivating students’ independent activities and improving the teaching quality, which included enhancing courseware making on important and difficult content, discovering engineering background of important and difficult content,improving interaction frequency with students,building the critical thinking of students,and reforming some experimental teaching.
