摘 要: | Nisin是由乳酸链球菌生产的一种多肽型天然食品防腐剂。研究了Nisin对辣白菜的防腐保鲜效果,结果表明,NIsin配合其他食品防腐剂对辣白菜的储藏可起到良好的防腐保鲜效果。质量分数为0.2g/kg的Nisin和0.3g/kg的脱氢醋酸钠可使真空包装的辣白菜在室温(25℃)的保质期达到20d。

Abstract: | Nisin is produced by Lactococus lactis,it is a peptide and a natural food preservative.In this paper,the effect of nisin in chili cabbage storage is investigated,and the result showes that nisin with other food preservatives can be useful in chili cabbage storage.The combination of 0.2 g/kg nisin and 0.3 g/kg sodium dehydroacetate enhance the shelf life of vacuum-packed chili cabbage to 20 d in room temperature(25 ℃). |
