内蒙古河套地区酸粥中乳酸菌的分离及其生物学特性的研究

摘    要:本实验从内蒙古河套地区家庭中采集12个酸粥的酸浆样品,进行乳酸菌的分离及生物学特性的研究。从样品中分离到10株乳酸菌,8株属于乳杆菌属,2株属于肠球菌属,其中以乳杆菌的细菌分布最广。本项实验分离到的乳酸菌属中温菌,且产酸、产香效果良好。

Abstract:samples of Acidic-Gruel were collected from families Hetao Area in Inner Mongolia. Lactic Acid Bacteria was isolated and their biological properties were studied 10 strains of Lactic Acid Bacteria were isolated,8 strains belong to Lactobacillus and 2 strains belong to Enterococcus. The bacteria of Lactobacillus are the most widely dispersed bacteria in the Acidic-Gruel. The isolated Lactic Acid Bacteria were medium temperature bacteria. They can produce acid and aromatic substance well.
