羊乳酒精稳定性的研究

摘    要:试验研究了pH值、Ca2+、温度和螯合剂对羊乳酒精稳定性的影响。结果表明,当pH在6.4~7.2时,随着pH值的升高,羊乳酒精稳定性增强;Ca2+在0.0025mol/L~0.02mol/L时,随着Ca2+浓度的增大,羊乳的酒精稳定性降低;温度在30℃~80℃时,随着温度的升高,羊乳的酒精稳定性降低。同时,在羊乳中添加磷酸二氢钠、磷酸氢二钠、三聚磷酸钠、焦磷酸钠、柠檬酸钠和EDTA钠都能够增强羊乳的酒精稳定性。

Abstract:Influences of pH values,Ca2+,temperature and sequestrants on ethanol stability of goat milk were studied during processing.The results showed that ethanol stability of goat milk increases with increasing pH values and decreases with addition of Ca2+.In contrast,the increase of temperature resulted in decreasing ethanol stability.The additon of NaH2PO4,Na2HPO4,sodium pyrophosphate,sodium citrateetal can increase ethanol stability of goat milk.
