摘    要:介绍了壳聚糖的性质,壳聚糖涂膜与果蔬贮藏的生理生化关系,常见果蔬壳聚糖处理的最佳浓度和效果,以及壳聚糖涂膜防腐、延缓果蔬衰老软化的可能机制的研究进展.

Abstract:In this article,advanced research on the chitosan characters,the physiological and biochemistry effects of chitosan coating on fruit and vegetable storage,the optimum density and effect of chitosan coating on fruit and vegetable were introduced,and the feasible mechanism of chitosan coating for putting off fruit and vegetable senescence and softening were discussed.
