摘    要:以金太阳(Prunus armeniaca Golden-sun)和魁金杏(Prunus armeniaca Kuiijn)为试材,研究其在绿熟期、商熟期和完熟期果实中类黄酮、类胡萝卜素等品质指标的变化。结果表明:两个杏品种果实单果重、可溶性固形物、Vc含量、可溶性糖、类黄酮和类胡萝卜素含量均随着果实的成熟不断升高,在完熟期达到最高,魁金高于金太阳;果实硬度和有机酸含量均随着果实成熟度的增加而降低,在完熟期达到最低,魁金低于金太阳,魁金果实品质优于金太阳。

Abstract:In order to explore the changes mechanism of fruit quality in Prunus armeniaca Golden-sun and Prunus armeniaca 'Kuijin' apricot cultivars in different maturation period,the changes of fruit qualities including flavonoid and carotenoids contents were studied at three mature stages of green mature,commercial mature and ripening with routine method.The results indicated that the content of average fruit mass,soluble solids,vitamin C,soluble sugar,flavonoid and carotenoids increased with fruit maturation,presented the peak value in ripening period.When fruit hardness and organic acid content decreased gradually with fruit maturation,attained the lowest levels in ripening period.The general fruit quality of 'Kuijin' was better than that of 'Golden-sun'.The correlation of average fruit mass,soluble solids,vitamin C and flavonoid,carotenoids were positive significant,which correlation coefficient were higher than 0.8.The color change of apricot pulp was correlated with biosynthetic pathway of carotenoids.
