| 摘 要： | 为探明陈香茶饮用的安全性，以不同产地的陈香茶为原料，采用国家标准测定方法对其主要的品质安全性指标进行评价和分析。结果表明，普洱散茶菌落总数最多，在本研究范围内未检测出黄曲霉素、致泻大肠埃希氏菌、大肠杆菌、沙门氏菌；有1个样品检出金黄色葡萄球菌；农药残留符合GB 2763-2005食品中污染物限量的要求；重金属铅的含量在0.38~4.70 mg/kg，符合茶叶卫生标准和食品中污染物限量要求；总灰分含量范围在5.42%~7.27%，水不溶性灰分含量在2.1%~3.81%，水溶性灰分占总灰分的50%以上，酸不溶性灰分在0.139%~0.793%，说明茶叶品质较好。总体来看，陈香茶的安全性是可靠的。
