乳制品中大肠菌群的鉴定与分类

摘    要:乳制品因原料奶污染及产品生产过程控制不严,极易污染大肠菌。从68个常见乳制品和工业产品的大肠菌群阳性样品(包括冷饮、奶粉和酸奶)中分离得到了143株菌,通过对分离菌株进行的生理鉴定试验,确定筛选出108株疑似大肠菌,生化鉴定试验最终确定45株大肠埃希氏菌(Escherichia coli)、15株弗氏柠檬酸杆菌(Citrobacter freundii)、23株肺炎克雷伯氏菌(Klebsiella pneumoniae)和21株阴沟肠杆菌(Enterobacter cloacae)。基本明确了乳制品中受污染的大肠菌群种类及受感染的比例,对今后建立乳制品中大肠菌群快速检测方法和对生产、品控工作具有重要的指导意义。

Determination and Differentiation of Coliform Group in Dairy Products
Abstract:Dairy products are easily contaminated by Coliform Group due to the raw milk contamination and the relaxed production process.143 germs are detected from 68 common dairy products and coliform-positive samples in industrial products(including cold drinks,powdered milk and yogurt).108 suspected Coliform Group are selected by physiology test.45 Escherichia coli,15 Citrobacter freundii,23 Klebsiella pneumoniae and 21 Enterobacter cloacae are deteced through biochemical reaction finally.The common type Coli Group species and their contamination ratio are definited in market dairy products.It provides a direct reference to the establishment of rapid detection of Coliform Group in dairy products.It is a great guiding significance for the production and quality control on the dairy products.
