摘    要:鲜枣营养丰富,尤其维生素C的含量很高,深受人们喜爱.但鲜枣不耐贮藏,严重制约了鲜枣产业的发展.本文从鲜枣采后外观形态和失水情况、呼吸类型和内源激素、维生素C、糖酸和乙醇含量、酶活性、果肉软化机理和细胞超微结构等方面,分析了鲜枣采后组织结构及生理生化的变化,以期为鲜枣的贮藏提供理论依据,并提出了该领域尚待解决的问题.

Abstract:Fresh jujube fruit is very nutritious and is especially rich in VC,but it's not easy to be stored,which limits the development of fresh jujube.Post-harvest physiological and biochemical changes of fresh jujube fruit were summarized in respiratory types,endogenous hormones,vitamin C,soluble solids and acid,ethanol,enzyme activity,softening mechanism and ultrastructural changes,which can provide theoretical basis for fresh jujube fruit storage.Some research projects need to be made in this field in the future were also suggested.
