几种鱼蛋白肽体外结合胆酸盐的效果研究

摘    要:研究了罗非鱼肉肽、罗非鱼皮肽、鲣鱼肽体外结合胆酸盐的效果.结果 表明,罗非鱼肉肽对3种胆酸盐都有结合能力,其余2种肽对胆酸盐没有或者有很弱的结合能力;罗非鱼肉肽对牛磺胆酸钠的结合率和结合量分别为38.27%和1.32 mg/g,对甘氨胆酸钠为34.07%和1.04 mg/g,对胆酸钠为20.80%和0.82 mg/g;罗非鱼肉肽结合胆酸盐适宜的添加量为15.0~16.7mg/mL;模拟胃肠道消化发现,罗非鱼肉肽对牛磺胆酸钠、甘氨胆酸钠的结合率和结合量都提高,分别达到43.69%和1.75 mg/g,37.31%和1.49 mg/g,罗非鱼肉肽在60 min对胆酸钠结合率和结合量基本达到平衡为28.74%和0.96 mg/g.罗非鱼肉肽结合牛磺胆酸钠的能力约为考来烯胺的40%.

Abstract:The effect of bile salt binding in vitro of tilapia meat peptide,tilapia skin peptide and skipjack peptide were studied.The results showed that the tilapia meat peptide had an binding ability on the three kinds of bile salts while the another two peptides had noor weak binding ability.The binding rates and binding amounts of sodium taurocholate,sodium glycine cholate and sodium cholate were respectively 38.27%and 1.32 mg/g,34.07%and 1.04 mg/g,20.80%and 0.82 mg/g;The suitable amount of the tilapia meat peptide on bile salt binding were 15.0~16.7 mg/mL.In the simulated gastro-intestinal digestive environment,the binding rates and binding amounts of tilapia meat peptide of sodium taurocholate,sodium glycine cholate wereincrease respectively 43.69%and 1.75 mg/g,37.31%and 1.49 mg/g.The binding rate and amount of sodium cholate of tilapia meat peptide reached 28.74%and 0.96 mg/g at 60 minutes being in dynamic equilibrium.The effect of bile salt binding of tilapia meat peptide was about 40%of that of cholestyramine.
