基于近红外光谱的猪肉细菌菌落总数的动力学模型

摘    要:运用近红外光谱检测猪肉在室温和冷藏贮藏过程中细菌菌落总数,实现无损、快速检验猪肉品质以及预测猪肉的贮藏期.使用傅立叶变换近红外光谱仪测定猪肉样品在贮藏期内的光谱,同时采用常规菌落总数测定方法测定样品的细菌菌落总数,获得了猪肉细菌菌落总数对数值与近红外光谱特征值随贮藏时间的变化规律,建立了细菌菌落总数对数值的零级和一级模型,并采用主成分分析法建立了基于近红外光谱特征值预测初值的猪肉细菌菌落总数对数值的动力学模型.该方法准确、灵敏,可用于生鲜猪肉细菌菌落总数的测定及其安全贮藏时间的预测.

Abstract:To achieve non-destructive,rapid inspection method for pork quality and to predict the storage period of pork,Near infrared spectroscopy (NIRS) was adopted to detect the total number of bacterial colonies presenting on refrigerated and ambient pork.In this study,the near infrared spectroscopy (NIRS) of stored pork was measured by using Fourier transform near infrared spectrometer at given time points.The total number of colonies living on pork was determined according to the conventional colony count method.By analyzing the number of bacterial colonies living on pork and the changes of NIRS at given time points,the relationships between them were obtained.A dynamic model based on NIRS and bacterial colonies on pork was established by zero/first order kinetics model and the principle components analysis.These findings would provide a theoretical basis for the application of NIRS in the non-destructive inspection technology of bacterial colonies on pork and optimal storage period of pork.
