| 摘 要： | 对长江常熟江段刀鲚产卵群体肌肉生化组成及能量密度进行了测定和分析。结果表明，肌肉水分含量为（74.62±0.21）%，粗蛋白含量为（16.75±0.08）%，粗脂肪含量为（6.78±0.10）%，粗灰分含量为（1.49±0.02）%，能量密度为（7.21±0.04） kJ/g。刀鲚肌肉中含有l8种氨基酸，其总量占鲜样和干样的比例分别为15.22%和5999%，其中8种人体必需氨基酸（EAA）占总氨基酸的比例为39.56%，必需氨基酸指数（EAAI）为70.53。测定了刀鲚肌肉中18种脂肪酸：其中饱和脂肪酸8种，单不饱和脂肪酸3种，多不饱和脂肪酸7种，EPA+DPA占脂肪酸含量的8.27%。刀鲚肌肉中钙含量为（831±9.08）μg/g，显著高于常规经济鱼类。

| Abstract: | Both biochemical components and energy density in the muscle of Coilia ectenes spawning stock were investigated in this paper.Sample fish（n=30）were collected from Changshu section of Yangtze River in June 2008The results showed that the content of moisture，crude ash，crude protein，crude fat and energy density in fresh muscle of C.ectenes were （74.62 ± 0.21）%，（1.49 ± 0.02）%，（16.75 ± 0.08）%，（6.78 ± 0.10）% and （7.21 ± 0.04） kJ/g，respectively.Eighteen common amino acids were found in the muscle of C.ectenes，the total content of amino acids（TAA）in dry and wet sample were 59.99% and 15.22%，respectively.The percentage of essential amino acids（EAA）in total amino acids（TAA）was 39.56%.The essential amino acids index（EAAI）was 70.53Eighteen common fatty acids were mensurated in muscle of C.ectenes，including 8 saturated fatty acids（SFA），3 mono unsaturated fatty acids（MUFA）and 7 poly unsaturated fatty acids（PUFA）.The contents of EPA and DHA in fatty acids were （5.51 ± 0.12） and （2.76 ± 0.09），respectively，which were much higher than those of most fish species.The contents of Ca in muscle of C.ectenes was （831±908）μg/g，which was significantly higher than that of general economical fishes. |
