| 摘 要： | 大豆是粮食兼经济作物,又是重要的工业原料,大豆中含有可精深加工并对人体有特殊功能的活性物质,如磷脂、低聚糖、皂苷、异黄酮、天然维生素等,极具开发潜力,被称为是21世纪的＂保健食品＂。豆饼则是畜牧业和水产养殖业饲料蛋白的主要来源,大豆根部极其丰富的根瘤菌又是一种重要的养地原料。
