苦瓜果肉蛋白的纯化及抑制作用研究

摘    要:以新鲜苦瓜果肉为材料,用沉淀和层析技术方法制备得到纯化苦瓜蛋白,SDS-PAGE电泳显示为单一条带。用不同浓度的纯化苦瓜蛋白对豆类种子(绿豆、红豆、黄豆)、谷类种子(小麦、玉米、水稻)进行抑制试验,结果表明:纯化苦瓜蛋白对种子萌发有抑制作用,随其浓度的升高,种子淀粉酶活性和可溶性糖含量降低,蛋白质含量升高。纯化苦瓜蛋白浓度为2.5 mg/mL时对各种子生化指标的影响最大。提示纯化苦瓜蛋白是有效的抑制剂药用成分。
