摘    要:为了解3种不同栽培方式(野生栽培,仿生境栽培和组培栽培)下血叶兰植株(叶片和假鳞茎)营养价值的差异。本研究采用隶属函数数值法和氨基酸评分(amino acid score,AAS)对血叶兰叶片和假鳞茎的基本营养成分和氨基酸等指标进行测定。结果显示,野生植株叶片基本营养价值最高,其隶属函数平均值最大(0.79);栽培血叶兰的总氨基酸(EAA)含量最高,其总氨基酸含量为23.07 mg/g,栽培植株叶片蛋白氨基酸的营养价值最高,其氨基酸比值系数分SRCAA值最大(81.98%)。氨基酸评分(AAS)结果表明,SY、YJ、ZJ、SJ的氨基酸组成与AFO/WHO规定的人体所需标准模式的氨基酸组成存在显著差异。在人工栽培时可通过调控其生境因子提高其营养价值,食用时和其它食物合理搭配。

Abstract:In order to understand the differences in nutritional value of the plants(leaves and false bulbs)of the three different cultivation modes(Wild cultivation,Bionic cultivation and Tissue culture).In this study,the amino acid score(AAS)and the numerical method of the membership function were used to measure the basic nutritional components,vitamin C and amino acids of the leaves and pseudobulbs of the blood orchid.The results showed that the leaves of wild plants had the highest basic nutritional value and the highest average membership function value(0.79).The total amino acid content of the cultivated blood leaf orchid was the highest,which was 23.07 mg/g.The nutritional value of the protein amino acid of the cultivated plant leaf was the highest,and the ratio coefficient of amino acid was the highest(SRCAA value was 81.98%).Amino acid score(AAS)showed that the amino acid composition of the SY,YJ,ZJ,SJ were different from that of the standard model required by AFO/WHO.In the artificial cultivation,it can improve its nutritional value by regulating its habitat factors.
