菜籽蛋白提取分离及其功能特性的研究

摘    要:介绍了我国油菜主产地、种植面积和生产状况,概括了菜籽蛋白营养价值,总结了菜籽饼粕中提取分离菜籽蛋白的方法,阐述了菜籽蛋白功能特性。结果表明,菜籽蛋白营养价值和功能特性显著,具备广泛应用于饲料和食品工业的生产潜力。

Abstract:The main source and planting area and production situation of rape in China are introduced,the nutritional value of rapeseed protein and the methods of extracting and isolating protein from rapeseed meal are summarized.The result shows that the nutritional value and functional properties of rapeseed protein is significant and rapeseed protein has greater production potential to be widely applied in feed and food industry.
