面筋蛋白的胃蛋白酶酶解物对大鼠免疫功能的影响

摘    要:选用 5 0只SD大鼠 ,分为试验组和对照组 ,每组 2 5只 ,试验组用经氯化钠缓冲液洗涤法制备的面筋蛋白的胃蛋白酶酶解物灌喂 ,对照组灌喂未经酶解的面筋蛋白 ,连续灌喂 2 1d。实验结果显示 :与对照组相比较 ,大鼠胸腺和脾脏相对重量分别上升了 2 0 % (P <0 0 1)和 2 9% (P <0 0 1) ;腹腔巨噬细胞吞噬活性上升了 12 % (P >0 0 5 ) ;淋巴细胞转化实验中刺激指数 (SI)提高了 33 0 % (P <0 0 5 ) ;血清NDV (新城疫病毒 )抗体血凝抑制效价 (HI)上升了 38 5 % (P<0 0 1) ;肠腔sIgA水平提高了 2 8 6 % (P <0 0 5 ) ;血清IL 2水平上升了 38 4 % (P <0 0 1) ;血清瘦素、胰岛素、T3 和T4水平均无显著变化。实验结果提示 :灌喂面筋蛋白胃蛋白酶酶解物能够增强机体免疫功能 ,并且这种免疫增强作用与细胞因子的调理有较为密切的联系。

Abstract:Fifty SD rats were randomly assigned to control group and treatment group(25 rats per group).The rats in treatment group were fed with prepared gluten hydrolysates and the control group fed with gluten for 21 days.The result of the experiments showed that,compared with control group,the relative weight of the thymus and spleen was higher 20%(P<0.01)and 29%(P<0.01),respectively;the phagocytic activity of peritoneal macrophage increased by 12%(P>0.05);the stimulated index(SI)of lymphocytic transformation increased by 33.0%(P<0.05);HI(hemagglutination inhibition)titer of NDV antiserum increased by 38.5%(P<0.01).The level of sIgA in intestinal contents and the IL-2 in serum elevated 28.6%(P<0.05)and 38.4(P<0.01).There were no significant difference in leptin,insulin,triiodothyronine and thyroxin between treatment and control group.The study indicated that gluten hydrolysates could significantly improve the immunity of rats and the immunity improvement of gluten hydrolysates has close relationship with the opsonic activity of cytokine.
