摘    要:目的]测定菠萝皮渣、果肉、顶芽中26种无机元素的含量及分布。方法]以菠萝为试材采用硝酸、双氧水混合消解体系对菠萝皮渣、果肉、顶芽进行前处理,再用微波消解-电感耦合等离子体质谱(ICP-MS)法测定其中K、Na、Ca、Mg、Fe、Mn、Zn、P、Al、Ti、Sr、Pb、Cd、Cu、Cr、Hg、As、Ni、Sn、Sb、Ba、B、V、Co、Ga、Se 26种无机元素含量。结果]菠萝各部位含有丰富的人体必需大量元素Ca、P、K、Na、Mg,微量元素Fe、Cu、Zn、Co、Mn、Ni、V、Sn、Sr、B、Se等,同时食品中常监测的有害元素Pb、Cd、Cr、As、Hg等含量均较低。结论]菠萝及其加工副产物不断被开发成各种食品、药品等,监控其无机元素成分含量,可为保证产品质量安全和优化生产工艺提供基础数据。

Abstract:Objective] To determine the content of 26 inorganic elements, which were K, Na, Ca, Mg, Fe, Mn, Zn, P, A1, Ti, Sr, Pb, Cd, Cu, Cr, Hg, As, Ni, Sn, Sb, Ba, B, V, Co, Ga, Se, in residue, flesh and terminal bud of pineapple. Method] Samples were diges- ted in a mixture of nitric and hydrogen peroxide. Microwave digestion-Inductively coupled plasma mass spectrometry (ICP-MS) was used to determinate sample. Result] The results showed that essential elements such as Ca, P, K, Na, Mg, microelements like Fe, Cu, Zn, Co, Mn, Ni, V, Sn, St, B, Se, were rich in pineapple. While other elements, which were commonly monitored in food like Pb, Cd, Cr, As, Hg, were found to be minimal in pineapple and its byproducts. Conclusion] Pineapple as well as its byproducts can be processed into various food products and medicine, therefore, monitoring inorganic elements in pineapple will improve products' safety and contribute to product pro- cessing technics optimization.
