苹果国内外精深加工研究现状及进展

摘    要:作为我国栽培面积和产量最大的第一大果品苹果,因加工率不足8%而极大制约其发展。因此,苹果精深加工是将我国苹果资源合理利用的重要手段同时也是亟待研究的重要课题。分别对目前国内外苹果汁、苹果醋、苹果酒的研究技术和现状做详细综述,以此对我国最重要的水果农产品的资源深加工和综合开发及利用起到推动和引领作用。

Abstract:Apple has the largest planted area and yield in fruit production of China, but its development is restricted because its processing rate is less than 8%. Therefore, deep processing of apples is an important way to make rational use of apple resources in China, and it is also an important topic needed to be studied urgently. In this paper, the research technology and current situation of apple juice, apple vinegar and apple cider were reviewed, thereby promoting and leading the deep processing and comprehensive development and utilization of the most important fruit products in China.
