菠萝皮醇提取物抑菌活性的研究

摘    要:以菠萝皮为原料,利用醇提法提取活性物质,通过平板打孔法研究该提取物对常见的4种食品污染菌的抑菌作用。实验结果表明:菠萝皮醇提取物对大肠杆菌、黑曲霉、金黄色葡萄球菌具有明显的抑制作用,在测试范围内,其最小抑菌浓度(MIC)分别为40、100、200 g/L;对大肠杆菌、黑曲霉的最低杀菌浓度(MBC)分别为800、1000 g/L,对金黄色葡萄球菌的MBC未在测试范围内;菠萝皮醇提取物对桔青霉则无抑制作用。通过比较介质pH对提取物稳定性的影响,发现菠萝皮醇提取物在酸性条件下有抑菌活性,在碱性条件下则无抑菌活性。

Study on the Antimicrobial Activity of Ethanol Extract of Pineapple Peel

Abstract:With pineapple peel as raw materials, active substance was extracted by ethanol solution, and the inhabitant activities of pineapple peel extract (PPE) against four common contaminated microbes of food were studied by using plate punch method. The results showed that the ethanol extract of pineapple peel had strong antibacterial activities against Escherichia coli, Aspergillus niger and Staphylococcus aureus, the minimum inhibitory concentration (MIC) in the test range were 40, 100 and 200 g/L respectively; the minimum bactericidal concentration (MBC) to Escherichia coli and Aspergillus niger were 800 and 1000 g/L respectively; MBC to Staphylococcus aureus was undetermined in the tested concentration range; and it has no inhibitory effect on Penicillium citrinum. The stability of the ethanol extract of pineapple peel was compared in different pH, the results showed that it has antimicrobial activity under acidic conditions, but no in alkali situation.
