摘    要:测定茶薪菇、榆黄蘑、猴头菇三种食用菌中总糖、还原糖和多糖的含量.结果表明:茶薪菇、榆黄蘑、猴头菇中总糖含量分别为38.42%、29.13%和31.21%,还原糖含量分别为5.17%、4.78%和7.63%,多糖含量分别为33.25%、24.35%和23.58%.

Abstract:The content of total carbohydrate,polysaccharide and reducing sugar in Agrocybe,Yuhuang mushrooms and Hericium were determined.The results showed that in the three edible fungi,total carbohydrate content was 38.42%,29.13%,31.21%,respectively,reducing sugar content was 5.17%,4.78%,7.63%,respectively,polysaccharide content was 33.25%,24.35%,23.58%.
