东北高寒地区地产小苹果加工品质研究

摘    要:针对黑龙江省地产苹果品种在果实青果期、成熟期及过熟期3个不同熟期,测定其总糖、总酸、维生素C、淀粉及可溶性固形物含量以及果实硬度、出汁率等情况,通过对果实营养成分以及果实加工品质的分析,确定了适宜加工的高糖、高酸及高出汁率等综合性状好的地产苹果品种,试验结果表明龙丰、大秋、黄太平等黑龙江省地产小苹果是加工的优良苹果品种。

Processing Quality of the Small Apple Harvested from Northeastern Cold Area

Abstract:The total sugar, total acid, vitamin C, starch content, soluble solids content, fruit hardness and juice yield of local apple cultivars were determined in green fruit stage, mature stage and overripe stage in Heilongjiang Province. Then their fruit nutrition and processing quality were evaluated. The results demonstrated that the local cuhivars, i.e. Longfeng, Daqiu, and Huangtaiping etc, were characterized by high content of sugar and acid, high rate of juice, which were suitable for processing.
