东北六须鲶的肌肉营养成分与品质评价

摘    要:对用含蛋白质45%的配合饲料饲养的东北六须鲇的肌肉营养成分进行了分析。结果表明:东北六须鲶肌肉鲜样中粗蛋白质、粗脂肪和水分的含量(均为质量分数)分别为16.47%、2.36%、和79.94%;新鲜肌肉中17种氨基酸的总量为15.74%,其中8种人体必需氨基酸为7.68%,必需氨基酸的构成比例基本符合FAO/WHO的标准,氨基酸评分(AAS)和A/E值均显示,东北六须鲶蛋白质的第一限制性氨基酸为蛋氨酸和胱氨酸;脂肪酸中含有高比例(25.6%)的多不饱和脂肪酸(PUFA),高于其它名优养殖鱼类。

Evalution of nutritive evaluation of Silurus Soldatovi muscle

Abstract:Nutritional components in the muscle of Silurus soldatovi were analyzed with routine methods. The results showed that contents of crude protein, crude fat and moisure in muscles were 16.47%, 2.36% and 79.94%, respectively. In muscles, the total content of 17 common amino acids in muscle was 15.74%, the content of 8 essential amino acids accorded with the FAO/WHO standard ftmdamentally. According to nutritional evaluation in amino score (AAS) and A/E, the first limited amino acids were (Met +Cys). The content of polyunsaturated fatty acid (PUFA) in fatty acids was 23.6%, higher than that in other economic fishes. It was concluded that it was one of freshwater fishes with better nutritive value.
