摘    要:霉菌毒素广泛存在于各种农产品中,威胁人类和动物健康。黄曲霉毒素是危害性最大的一类霉菌毒素,其中黄曲霉毒素B;(AFB1)毒性最强。动物AFB1中毒过程中可诱导氧化应激。本文阐述了AFB1诱导动物氧化应激的机制,以及不同生物活性物质对AFB1诱导的动物氧化应激的抗氧化防御机制,以期为动物生产中AFB1污染的防控提供参考。

Abstract:Mycotoxins are found in a wide range of agricultural products and pose a threat to human and animal health.Aflatoxin is the most harmful,among which aflatoxin B;(AFB1) is the most toxic.Oxidative stress can be induced during AFB1 poisoning in animals.In this paper,the mechanism of AFB1 induced oxidative stress,and the antioxidant defense effect of different bioactive substances and the potential mechanism in animals were summarized.This paper will provide reference for the prevention and control of AFB1 pollution in animal production.Chinese Journal of Animal Nutrition,2022,34(2):710-719]
