临武鸭生产性能与肉质特性的研究

摘    要:将临武鸭屠宰后测定产肉性能和肌肉品质。结果表明,临武鸭的屠宰率为88.1%,半净膛率为82.07%,全净膛率为72.20%,胸肌率、腿肌率、皮脂率、腹脂率分别为9.23%、10.24%、26.53%、0.94%。公母临武鸭之间除腹脂率差异显著外(P〈0.05),其余指标差异均不显著。临武鸭屠宰后1h、24h胸肌pH分别为5.50、5.87。腿肌肌纤维直径为133.91um。胸肌失水率和熟肉率分别为24.17%、60.74%,腿肌失水率和熟肉率分别为23.90%、61.88%。
