不同杂交组合鹅子一代肉品质特性的研究

摘    要:试验旨在比较70日龄太罗鹅(太湖鹅♂×罗曼鹅♀)、罗太鹅(罗曼鹅♂×太湖鹅♀)、浙罗鹅(浙东白鹅♂×罗曼鹅♀)、罗曼鹅(纯种)和太湖鹅(纯种)的肉品质(肌苷酸、肌内脂肪、氨基酸和脂肪酸),为肉鹅杂交配套系选育提供一定理论依据。每组5个重复,每个重复6只鹅(公母比为1:5),子一代70日龄时每组取体型相近的6只进行屠宰。结果表明:罗曼鹅与太罗鹅胸肌中肌苷酸含量显著高于浙罗鹅(P<0.05);浙罗鹅胸肌中肌内脂肪含量极显著高于其他4组(P<0.01);太罗鹅和浙罗鹅腿肌肌内脂肪含量显著高于其他3组(P<0.05);太罗鹅和罗曼鹅胸肌与腿肌必需氨基酸含量极显著高于其他3组(P<0.01),且太罗鹅鲜味氨基酸含量极显著高于其他4组(P<0.01);太罗鹅和浙罗鹅胸肌亚油酸、亚麻酸含量极显著高于其他3组(P<0.01);杂交鹅腿肌亚油酸和亚麻酸含量极显著高于纯种鹅(P<0.01);太罗鹅和浙罗鹅胸肌和腿肌必需脂肪酸与多不饱和脂肪酸含量极显著高于其他3组(P<0.01)。本研究表明浙罗鹅和太罗鹅肉品质总体优于其他3组。

Comparison of Meat Quality of F1 Goose Generated with Different Cross Combinations

Abstract:This study aims to compare the meat quality, including inosinic acid, intramuscular fat, amino acid, and fatty acid in 70-day-old Tailuogoose(Taihu Geese ♂× Roman Geese♀), Luotaigoose(Roman Geese ♂× Taihu Geese♀), Zheluo goose(Zhedong white geese♂× Roman geese♀), Roman goose andTaihugoose, providing a theoretical basis for the breeding of meat-type hybrid geese. The results showed that theinosinic acid content in breast muscles of Luoman Geese and Tailuo Geese were significantly higher than that in Zheluo Geese(P<0.05). The content of intramuscular fat was the highest in the breast muscle of Zheluo geese, which was significantly higher than that in the other four groups(P<0.01). In the leg muscle, the content of intramuscular fat in Tailuo Geese and Zheluo Geese were significantly higher than that in other three groups(P<0.05).In the breast and leg muscles, the essential amino acid content of Tailuo Geese and Roman Geese were significantly higher than that in other three groups(P<0.01), and the amino acid content of Tailuo Geese was significantly higher than that of other four groups(P<0.01). The contents of linoleic acid and linolenic acid in the breast muscle of Tailuo and ZheluoGeese were significantly higher than in the other three groups(P<0.01). In leg muscles, the content of hybrid linoleic acid and linolenic acid were significantly higher than that of purebred geese(P<0.01). In breast and leg muscles, the contents of essential fatty acids and polyunsaturated fatty acids were significantly higher that in Tailuo Geese and Zheluo Geesethan in other three groups(P<0.01). This study shows that the meat quality of Zheluo Geese and Tailuo Geese are better than that of other three groups.
