In a field study 63 commercial cattle transports to German slaughter plants including 580 bulls, cows and heifers were investigated to estimate the impact of pre and post transport aspects on animal welfare. Study 1 evaluated these aspects as part of a large model covering all possible influences at transport and slaughter on biochemical stress response and carcass and meat quality. Included were keeping system, behavioural and clinical observations at loading, unloading and lairage, transport time, loading density, mounting prevention, regrouping and lairage time. In study 2 more detailed questions about loading and unloading were answered by investigating the impact of facility design and handling criteria on cattle behaviour and heart rate. Cattle from tied housing show an increased stress response to all transport procedures. Many aspects of facility design and handling contribute to quality of loading. Cattle show calmer behaviour, turn, balk or fall less if they are not mixed and driven in small groups on driveways without impediments but with regular sideblock, not wider than the vehicle ramp. Vehicle ramps should have high and closed side gates, be inclined less than 20 degrees, and the step towards ramp should be less than 15 cm. Unloading is improved if performed level and to the back of the vehicle (behaviour, heart rate, cortisol, CK). Direct reloading should be avoided and mounting should be prevented during transport and lairage (CK, lactate, bruising). But mounting prevention devices may increase bruising if set too low (< 20 cm above withers). Longer lairage time is disadvantageous (CK, energy metabolism).  相似文献

The relationships between farmers' behavior toward veal calves, calves' responses to handling and transport, and veal meat quality were assessed. Two groups of 10 veal units were selected based on previous observed farmers' behavior toward the calves: one group consisted of farmers who had shown predominantly "positive" behavior toward the calves, and the other group of farmers had shown predominantly "negative" behavior. Calves were observed for their reactions to people at the unit, and 20 calves per veal unit were transported either directly to the slaughterhouse or subjected to additional transport consisting of a supplementary 20-min transport with additional unloading and loading. The effort needed to load the calves onto the truck and their behavior during loading was observed. During loading and unloading, and during lairage at the slaughterhouse, potentially traumatic incidents (falling down, hits against structures, slips) were recorded, and heart rate and cortisol measurements were taken. Carcasses were evaluated on their weight, color, conformation, pH, and bruise level. A meat sample was taken from the longissimus thoracis muscle for physical, chemical, and sensory analysis. Calves originating from "positive behavior" units showed fewer fear responses to people at the veal unit, needed less effort to be loaded to the truck, had lower heart rates during loading and unloading, and had fewer incidents at the slaughterhouse than calves from "negative behavior" units (P < 0.05). Carcasses from calves from "positive behavior" units were paler, and analyses of the meat sample revealed lower pH, moisture level, and redness compared to carcasses from calves from "negative behavior" units (P < 0.05). Additional transport led to a lower cortisol level after transport and to higher carcass pH values at slaughter compared to direct transport (P < 0.05) but did not affect meat quality. We concluded that farmers' positive behavior toward veal calves during rearing is likely to reduce the emotional responses of calves to handling and transport and to lead to fewer incidents, compared to negative behavior. This reduction of calves' emotional responses seems to be the reason for improved veal meat color.  相似文献

Information on the effect of road transportation conditions and lairage times on the meat quality of pork under South African conditions is very sparse. In this investigation, the effects of 2 road conditions (rough road with frequent stops - A; smooth road, few stops - B) and 2 lairage holding periods (2 h and 24 h) on the physical meat quality attributes of commercially produced pigs during summer (ambient temperatures > 30 degrees C) in the Western Cape (South Africa) were investigated. Pig meat from pigs transported on a road that caused more stress (A), had lower pH 45 (measured 45 min post mortem) values after 2 h lairage than pigs transported over a smoother road. Pigs B had a lower muscle pH 24 (measured 24 h post mortem) than group A, indicating that they had more glycogen reserves available for post mortem glycolysis. Road conditions A were more stressful resulting in a higher incidence of PSE pork, as shown by the percentage drip loss and the L* values. When the lairage period was increased to 24 h prior to slaughter, pigs transported under road conditions A had time to replenish their energy reserves and the pH 45, drip loss and L* values were within an acceptable range. However, pigs transported under road conditions B had lower pH 45 and higher pH 24 values, indicating that the lairage period was too long and that energy reserves were depleted in order to adapt to the stressful conditions. Results from this investigation indicate that improvement of the transport/road conditions will result in better pork quality.  相似文献

Comparisons were made of the behaviour, physiology and meat quality of 24-week-old male veal calves (mean live weight 234 kg) that were slaughtered either at the veal unit (the control group) or following 3 h transportation at space allowances of either 0.7 or 0.95 m2 calf−1 and 1.5 h of lairage. Compared with nontransported calves, transported calves had a greater heart rate during the journey and during lairage; greater plasma cortisol concentration immediately after the journey, but not after 1.5 h of lairage; and greater plasma creatine kinase activity immediately after the journey and after 1.5 h of lairage. The transported calves did not lie down during the journey. There was no effect of space allowance on either the heart rate or frequency of potentially traumatic events during the journey or the plasma cortisol concentration and plasma creatine kinase activity sampled after the journey. There was no effect of transport on either carcase bruising or muscle pH 24 h after slaughter. Although compared with ‘on-farm’ slaughter, the transport and handling associated with the journey to the slaughterhouse were stressful to the calves; there were no adverse effects of transport on either carcase bruising or meat quality.  相似文献

A total of 150 Large White cross Landrace pigs (110-120 kg) of both sexes were used to investigate the effects of three different lairage times (0 h, 3 h, 9 h). Blood samples were collected at exanguination and cortisol, glucose, lactate, muscle enzymes and haematological parameters were determined. Post-mortem measurements of muscle pH were taken at 20 min, 2 h and 24 h from Longissimus thoracis and Semimembranosus. Lairage time showed a significant effect on pH24, internal muscle reflectance using the fibre optic probe (FOP24), red blood cells, neutrophils and lymphocytes, glucose and enzymatic activities. Changes in blood profile and meat quality parameters indicated that three hours of lairage in Spanish commercial conditions may reduce the amount of stress exhibited by pigs at slaughter and better meat quality can be obtained. No lairage or an excessively long lairage period without food may compromise animal welfare and meat quality.  相似文献

Livestock transport exposes animals to a range of potential stressors that may compromise their welfare and final product quality, and those effects typically increase with the distance travelled. In North America, producers often use pot-belly vehicles for long hauls but little is known about their suitability for transporting lambs. We followed two long-distance trips using pot-belly trailers carrying 500 lambs (each) from Northern to Central Mexico in winter, to measure possible effects on animal welfare and meat quality. Sixty lambs per trip were placed at different locations within the pot-belly trailer. Animals were equipped with iButton Thermochron® temperature devices, which registered body temperature throughout pre- and post-slaughter stages. Despite the rather cool winter conditions, lambs placed in the “belly” and “nose” compartments had higher body temperatures at loading, during transport and lairage and after slaughter (carcass temperature). Those lambs also had higher levels of plasma cortisol, glucose and creatine kinase (CK), and a higher neutrophil/lymphocyte ratio. Regarding meat quality, ultimate pH (24 h) was higher in all locations, especially in LT4 location. Overall, the results suggest a link between thermal stress during transport, elevated physiological indicators of stress and poorer meat quality.  相似文献

选取体质量约为100 kg、氟烷基因型为NN的长×大二元杂交猪60头,随机分为3组:不休息组,休息3 h组,休息3 h+玩具组,公母各半.根据评分标准分别记录休息过程中猪的精神状况.放血时收集血样,用于分析血浆中皮质醇、促肾上腺皮质激素(ACTH)浓度,乳酸脱氢酶、肌酸激酶活性,乳酸、血糖浓度;添加EDTA-K<,2>抗凝剂的血样用于血细胞分析.同时在放血时,测定血温.屠宰后.测定背最长肌24 h滴水损失;背最长肌(LM)、半膜肌(SM)45 min以及24 h的pH、色值、导电率.结果表明:①休息3 h+玩具组在3个时间段的精神评分要极显著高于休息3 h组,随着时间的延长猪都表现出趋于平静的趋势;②休息3 h+玩具组和休息组3 h组在皮质醇、促肾上腺皮质激素要显著低于不休组(P<0.05),相反乳酸脱氢酶、肌酸激酶要显著高于不休息组(P<0.05),而休息3h+玩具组与休息3 h组差别不显著(P<0.05);③3个休息处理组在肉质指标上没有出现显著差别(P<0.05);④休息3 h+玩具组、休息3 h组在红细胞数(RBC)、血红蛋白含量(HGB)均要显著低于不休息组(P<0.05);休息3h+玩具组在白细胞数(WBC)上显著高于不休组(P<0.05);休息3 h组的淋巴细胞绝对值(W-SCC)显著高于不休息组(P<0.05);而休息3 h+玩具组与休息3 h组在所有的免疫指标上都没有显著差异(P>0.05).根据上述的结果显示,宰前一定要让猪有一个休息的过程,这种措施能有效缓解猪的应激,并能恢复其免疫能力;在休息的过程中,添加部分福利玩具,至少对猪的精神状态有明显的好处.  相似文献

Forty-eight slaughter bulls were transported by road in groups of eight for approximately 30 min, 3 h and 6 h in two replicates. Animal welfare during the transport process was assessed. Loadings and unloadings were evaluated with a scoring method. Heart rates were monitored at the farm before loading and during all stages of transport. Blood samples were taken from all animals a week before transport and at sticking and analysed in terms of haematological values: hematocrit, haemoglobin, red and white blood cells (RBC and WBC), differential WBC counts and neutrophil:lymphocyte ratio. Glucose, creatine kinase, lactate and cortisol were also determined. To evaluate differences in meat quality, pH and water-holding capacity (WHC) were measured 24 h after slaughter. The loading and unloading scores were very low (low stress) but were associated with changes in heart rate, especially loading. Animals recovered their resting heart rate during the journey in medium and long transports. On the other hand, animals transported around 30 min maintained an elevated heart rate during the whole journey. All animals showed a stress response with significantly higher (p < 0.05) levels of erythrocyte series, N:L ratio, glucose and lactate. Animals transported for 3 and 6 hours had significantly (P<0.05) higher levels of cortisol than controls or 30 min transports, without differences between control and the shortest journey. Different transport times did not influence meat quality. Under good conditions, the transport had a slight effect on welfare, meat quality or physiological parameters related with stress.  相似文献

Physiological and behavioural field studies on long distance road transport of 116 heifers, 135 bulls and 64 steers in 10 goose-necked double decked semitrailers from northern Germany to mediteranean ports showed different impacts of handling during pre-transport (i.e. collection of animals, weighing, loading), transport journey itself and post transport handling (i.e. lairage time) on coping strategies of the different categories of cattle. It was found loss of body weight in steers (-6.65%) coming from pasture was higher compared to bulls (-4.6%) during transport, but they recovered during lairage time in a better way. All categories of cattle showed catabolic energy metabolism during transport, but only in bulls and to a farer extent in heifers this leads to a tendency of a ketotic metabolism during second parts of transport and lairage time. During whole transport time no more than 20% of bulls and steers were laying down, and less than 5% were feeding during driving intervals. In all parts of transport general stress parameters like heart rate (with exception to steers) and cortisol were elevated as a part of adaptation to the transport environment, but indicating high physical and emotional loads on the animals with no resting possibilities. In this context animals have to be prepared carefully to be transported, i.e. in reference to energy and fluid balance, and to be feed in sufficient time intervals (breaks) and lengths to maintain fundamental behavioural and physiological needs of the animals during transport. The lairage facilities are very important for the bulls and in the case of heifers the feeding regime during lairage time must be improved to ensure the possibility for a real resting and recovery of the animals after transport.  相似文献

This study investigated the effects of pre‐slaughter transport during summer and subsequent water shower spray on broiler meat quality and protein characteristics. Arbor Acres broiler chickens (n = 126, 42 days old, mixed sex, 2.5‐3 kg) were randomly categorized into three treatments: (i) control group without transport (C); (ii) 30 min transport (T); and (iii) 30 min transport followed by 10 min water shower spray and 20 min lairage (T/W). Each treatment consisted of six replicates with seven birds each. Ambient temperature was 32‐35°C during transportation. Results indicated that transport during high ambient temperature denatured myosin and sarcoplasmic proteins, led to decreased protein solubility and resulted in glycogen phosphorylase precipitated to the myofibrillar fraction. Furthermore, meat quality in the transport group showed a pale, soft and exudative (PSE)‐like syndrome. Water shower spray during lairage after transport reduced the degree of protein denaturation and lessened the deterioration of meat quality.  相似文献

Keeping pigs in lairage provides a buffer to supply the slaughter line and allows the pigs to recover from the stress of transport. It has implications for the pigs' welfare by influencing their behaviour and ease of handling. In terms of pork quality, optimal lairage times for most pigs in the UK are probably one to three hours. Shorter lairage times are associated with more pale, soft, exudative (PSE) meat and longer times are associated with more dark, firm, dry (DFD) meat, more skin blemishes caused by fighting, and a lower carcase yield. However, when pigs have not been previously stressed by handling procedures, resting them in lairage may have no beneficial effects on the pigs' welfare or meat quality. At very high environmental temperatures there is evidence that a holding period of less than one hour may help to reduce the number of PSE carcases. At temperatures above 10 degrees C showering the pigs with water is beneficial. Fasting times need to be controlled to minimise the potential loss of carcase yield while reducing the volume of gut contents to reduce the risk of carcase contamination. Lairages can act as reservoirs of infection by pathogenic bacteria and there is evidence that longer holding times increase the risk of cross-contamination.  相似文献

In this study the effects of barren vs enriched housing conditions of pigs on their behavior during the lairage period (2-h holding period before slaughter), carcass characteristics, postmortem muscle metabolism, and meat quality were studied. The barren housing system was defined by common intensive housing conditions (i.e., with slatted floors and recommended space allowances), whereas the enriched environment incorporated extra space and straw for manipulation. Salivary cortisol concentrations were measured before transport and at the end of the lairage period. During the lairage period the percentage of time spent walking and fighting by the pigs was registered. Carcass characteristics such as weight, meat percentage, and backfat thickness were determined. At 5 min, 45 min, 4 h, and 24 h postmortem, pH, temperature, and lactate concentrations were determined in the longissimus lumborum (LL) and biceps femoris (BF) muscles. Capillarization of the muscle, mean muscle fiber area, and color and drip loss after 2 and 5 d of storage were determined for both muscle types. Pigs from the barren environment had a significantly higher increase in cortisol from farm to slaughter, but no differences in behavior were observed during the lairage period. Carcass characteristics did not differ between pigs from barren and those from enriched housing conditions. Postmortem lactate formation was significantly lower in LL muscles of enriched pigs at 4 and 24 h postmortem. Capillary density and mean muscle fiber area did not differ between the groups of pigs. The percentage of drip loss at 2 and 5 d after storage of LL muscle samples from enriched-housed pigs was significantly lower than that of the barren-housed pigs. Similar tendencies were found for the BF muscle from pigs kept in an enriched environment, but these were not statistically significant. The housing system did not affect meat color. It is concluded that on-farm improvement of animal welfare by environmental enrichment can also lead to beneficial economic effects after slaughter by improving the water-holding capacity of pork.  相似文献

A total of 120 crossbred [synthetic line x (Large White x Landrace)] pigs (castrated males and females) were used to evaluate the influence of rearing conditions for growing-finishing pigs on growth performance, carcass, stress reactions at slaughter, and meat eating quality. At approximately 35 kg of live weight (LW), littermates were allocated to either a conventional (fully slatted floor, 0.65 m2/pig, considered as control, CON) or an alternative (sawdust bedding with free access to an outdoor area, 2.4 m2/pig, OUT) system, until slaughter at approximately 110 kg of LW. Pigs had free access to standard growing and finishing diets. The trials were conducted in spring, summer, and winter, with each season involving 2 pens of 10 pigs in each system. Compared with the CON, the OUT pigs exhibited a greater growth rate (+10%, P < 0.001) due to their greater feed intake (+0.23 kg/d, P < 0.01), resulting in a greater body weight at slaughter (+7 kg, P < 0.001). The OUT pigs had thicker backfat (+2.4 mm, P < 0.01) and lower lean meat content (- 2.0% points, P < 0.001) than the CON pigs. The OUT system did not (P > 0.10) influence the behavioral activities of pigs during lairage at the slaughterhouse, or the urinary levels of catecholamines and cortisol, and plasma levels of ACTH, cortisol, lactate, creatine kinase, and FFA immediately after slaughter. The OUT pigs had similar (P > 0.10) pH values 30 min postmortem (pH1) in the LM, biceps femoris (BF), and semimembranosus (SM) muscles, similar ultimate pH (pHu) in LM, but lower pHu in SM (- 0.07 unit, P < 0.001) and in BF (- 0.03 unit, P = 0.029). Despite nonsignificant effects of production system on stress reactions at slaughter, assessed by urine and plasma indicators and muscle metabolism at 30 min postmortem, meat from OUT pigs had more LM drip loss after 2 (+1.0%, P = 0.003) and 4 (+1.1%, P = 0.010) d than did meat from the CON pigs. The OUT system slightly increased meat yellowness (b* value) in the LM (+0.7 unit, P = 0.001), BF (+0.5 unit, P = 0.014), and SM (+0.5, unit P = 0.041), whereas redness (a*) and lightness (L*) of the 3 muscles were unaffected (P > 0.07). Intramuscular fat content was greater in the LM (+17%, P = 0.001), BF (+14%, P = 0.004), and SM (+17%, P = 0.003) of the OUT pigs. Outdoor rearing during summer and winter improved meat juiciness, whereas odor, flavor, and tenderness were unaffected (P > 0.10). Influence of rearing conditions on all the other traits studied did not depend on the season.  相似文献

研究测定了92~109 kg体重阶段31头杂交商品猪的胴体品质和肉质特性,以分析商品猪胴体、肌肉品质随体重的变化规律及其相关程度,为确定适宜上市屠宰体重提供依据。结果表明,商品猪在92~95 kg阶段屠宰瘦肉率最高为61.17%,分别比其它3组提高4.83%(P>0.05)、11.83%(P<0.05)和8.84%(P<0.05);在107~109 kg阶段屠宰肉品质〖JP2〗优良,肌肉pH 6.07,肉色和大理石纹评分较高分别为3.13和 3.33,肌内脂肪含量较高为3.89%,肌肉失水率较低为18.91%。胴体和肉质性状间相关程度有强有弱,相关系数有正有负。相同性状间有较强的正相关,相反性状间有较强的负相关。综合分析试验结果认为,注重产肉量强调胴体瘦肉率时可选择在92~95 kg阶段屠宰;注重肉品质时可选择107~109 kg阶段屠宰;若二者兼顾则选择95~98 kg阶段屠宰较为合适。  相似文献

The objective of the present experiment was to investigate the effects of transportation, lairage, and preslaughter stressor treatment on glycolytic potential and pork quality of the glycolytic longissimus and the oxidative supraspinatus (SSP) or serratus ventralis (SV) muscles. In a 2 x 2 x 2 factorial design, 384 pigs were assigned randomly either to short (50 min) and smooth or long (3 h) and rough transport, long (3 h) or short (< 45 min) lairage, and minimal or high preslaughter stress. Muscle samples were taken from the LM at 135 min and from the SSP at 160 min postmortem for determination of the glycolytic potential and rate of glycolysis. At 23 h postmortem, pork quality was assessed in the LM and the SV. Effects of transport and lairage conditions were similar in both muscle types. Long transport increased (P < 0.01) the glycolytic potential and muscle lactate concentrations compared with short transport. Both long transportation and short lairage decreased (P < 0.01) redness (a* values) and yellowness (b* values) of the LM and SV. In combination with short lairage, long transport decreased (P < 0.05) pork lightness (lower L* values), and electrical conductivity was increased (P < 0.05) after long transport. Several interactions between stress level and muscle type (P < 0.001) were observed. High preslaughter stress decreased (P < 0.001) muscle glycogen in both the LM and SSP, but this decrease was greater in the LM. Lactate concentrations were increased (P < 0.001) only in the LM by high preslaughter stress. Increases in ultimate pH (P < 0.001) and decreases in a* values (P < 0.01) were greatest in the SV, whereas increases in electrical conductivity (P < 0.001) were greatest in the LM. The lack of interactions among transportation, lairage, and muscle type was attributed to the relatively minor differences in stress among treatments. It was concluded that, in glycolytic muscle types such as the LM, the high physical and psychological stress levels associated with stress in the immediate preslaughter period have a greater effect on the water-holding capacity of the meat and may promote PSE development. Conversely, oxidative muscle types tend to have higher ultimate pH values and produce DFD pork in response to intense physical activity and/or high psychological stress levels preslaughter.  相似文献

Cattle transported to the government-run cattle market and slaughter slab in Akinyele, Oyo State, Nigeria on their final voyage are facing a disturbingly cruel, filthy and unsafe environment that is also raising the risk of contamination of meat sold for human consumption. This report gives a picture of what the cattle have to go through before they are slaughtered. This study also reveals cattle awaiting slaughter in abysmal health conditions, cows pulled with extreme force towards lairage and slaughter slab. Equally disturbing is the filthy situation inside the abattoir where the risk of contamination of meat is significant. Also, poor meat handling, transportation and sales practices subject meat to contamination leading to poor quality and exposure of human consumers to health risk. Development of hygienic slaughter slab operations, improved transportation system for both livestock and meat is therefore recommended; not only for Akinyele, but all abattoirs and slaughter slabs in Nigeria.  相似文献

The objectives of the present experiment were 1) to study the effects of transport conditions and lairage duration on stress level, muscle glycolytic potential, and pork quality; and 2) to investigate whether the negative effects of high stress immediately preslaughter are affected by preceding handling factors (transport and lairage). In a 2 x 2 x 2 factorial design, halothane-free pigs (n = 384) were assigned to either short (50 min) and smooth or long (3 h) and rough transport; long (3 h) or short (<45 min) lairage; and minimal or high preslaughter stress. Pigs were processed in eight groups (48 pigs per group) on various days at a commercial plant. Blood samples were taken at exsanguination to measure plasma cortisol and lactate concentrations. Muscle pH and temperature were measured at 30 and 40 min, respectively, and both were measured at 3 h, postmortem. A LM sample was taken 135 min postmortem to estimate glycogen content and rate of glycolysis. Pork quality attributes were assessed 23 h postmortem. Short transport increased cortisol when followed by short lairage (transport x lairage; P < 0.01). Long transport, but not lairage (P > 0.30), tended to increase (P = 0.06) muscle glycolytic potential. Long transport tended to increase (P = 0.08) electrical conductivity, and decreased a* (P < 0.01) and b* (P < 0.02) values. Decreasing lairage from 3 h to <45 min decreased (P < 0.05) the L* value, but it did not (P > 0.10) affect other pork quality traits. High stress decreased (P < 0.001) muscle glycolytic potential, and increased (P < 0.001) plasma lactate, cortisol, muscle temperature, rate of pH decline, and ultimate pH. Except for decreased (P < 0.001) b* values, pork color was not (P > 0.40) affected by high stress, but water-holding properties (measured by electrical conductivity, filter paper moisture, and drip loss) were impaired (P < 0.001) by high stress. Fiber optic-measured light scattering and Warner-Bratzler shear force were not (P > 0.12) affected by any treatment. Comparisons with the "optimal" handling (short transport, long lairage, and minimal stress) revealed that, with regard to water-holding properties, the negative effects of high stress were aggravated by suboptimal transport and lairage conditions. High stress alone increased electrical conductivity by 56%, whereas high stress in combination with short lairage led to an 88% increase. However, high preslaughter stress contributed most and was the major factor responsible for reductions in pork quality.  相似文献

The experimental materials comprised 44 hybrid [female (Polish Large White x Polish Landrace) x male Duroc] growing-finishing pigs. The animals were randomly divided into two groups: 24 pigs were slaughtered immediately after transport and 20 pigs were slaughtered after a 24-hour rest period in the lairage. The meat content of pork carcasses, carcass dressing percentage, the proximate chemical composition, physicochemical and sensory properties of meat and shear force values were determined. Serum creatine kinase activity and cortisol levels were determined in blood samples collected before transport and during carcass bleeding. Pigs slaughtered immediately after transport, compared with those slaughtered after a 24-hour rest period, were characterized by a higher meat content of the carcass and a higher carcass dressing percentage. Pre-slaughter handling had no effect on pork quality. The incidence of normal-quality meat, partially PSE (pale, soft, exudative) meat and PSE meat was similar in both groups. Chemical analysis showed that the content of dry matter, total protein, fat and minerals in meat was comparable in both groups. As regards the functional properties of the pork, samples from the carcasses of pigs that had rested before slaughter had a higher contribution of the red color component. Meat from pigs slaughtered immediately after transport had more desirable sensory properties. Pre-slaughter resting had a significant effect on those analyzed physiological parameters which were found to be good indicators of pre-slaughter stress. Serum creatine kinase activity and cortisol levels were higher in blood samples collected after transport (during carcass bleeding) than in samples collected before transport, pointing to a strong stress response of animals to pre-slaughter treatment. The decrease in serum cortisol levels in blood samples collected during bleeding from the carcasses of pigs slaughtered after a 24-hour rest period, compared with samples collected from animals slaughtered immediately after transport, suggests that rest before slaughter alleviated stress induced by pre-slaughter handling operations.  相似文献

In some production settings, beef bulls are mixed at the beginning of the finishing period to obtain homogeneous groups to facilitate finishing and to produce more homogeneous carcasses. Given the stress induced by mixing, we questioned whether this practice was profitable. Sixty-four young bulls were finished in groups of four over 8 mo. They were either mixed or unmixed and had either homogeneous vs. heterogeneous BW at the beginning of finishing. Behavioral traits (social behavior following mixing and general activities during the finishing period), stress measurements (cortisol concentration, adrenal weight, catecholamine-synthesizing enzyme activity, and pain sensitivity), and production traits (growth rate, homogeneity, feed efficiency, and carcass measurements) were evaluated. Bulls reacted to the mixing with increased frequency of social interactions (agonistic interactions: 17.9 in mixed vs. 1.2 in unmixed bulls, P < 0.001; sexual interactions: 9.6 vs. 1.7, P < 0.001; nonagonistic interactions: 5.25 vs. 3.1, P < 0.05). Agonistic and sexual interactions were more frequent between bulls of homogeneous BW (P < 0.05). Throughout the finishing period, the synchronization of activity tended to be lower between mixed bulls (P = 0.09). At slaughter, the activity of tyrosine hydroxylase, a catecholamine-synthesizing enzyme, was increased in mixed bulls (1.52 vs. 1.16 nmol.h(-1).mg(-1), P < 0.05), which may indicate chronic stress. No differences were noted in ADG or carcass traits among treatments. The variability of BW within groups increased in groups that were initially homogeneous, whereas it decreased in groups that were initially heterogeneous. In conclusion, mixing young beef bulls at the beginning of the finishing period did not have detrimental effects on health and production, but mixing induced stress, perhaps due to decreased cohesion within groups. Thus, we failed to confirm the proposed benefit of mixing bulls to homogenize their BW at the onset of finishing because BW homogeneity within groups was not maintained throughout the finishing period.  相似文献

Abstract

Outdoor production on pasture is considered an option in organic pig production. The aim of the present trial was to study the influence of feeding strategies combining outdoor and indoor rearing on pig meat quality. The experiment was carried out with 245 pigs in 5 replicates, and commenced following weaning at day 52. Five treatments were compared: 1) pigs fed ad libitum and reared indoors with access to an outdoor concrete area (In-A); 2) pigs fed restrictively on pasture until 40 kg body weight and then kept indoors with access to an outdoor concrete area and fed ad libitum until slaughter (In-40A); 3) pigs fed restrictively on pasture until 80 kg body weight and then kept indoors with access to an outdoor concrete area and fed ad libitum until slaughter (In-80A); 4) pigs reared on pasture and fed restrictively during the whole period of growth (Out-R); and 5) pigs reared on pasture and fed ad libitum during the whole period of growth (Out-A). All pigs had free access to roughage (clover-grass silage/fresh clover grass). Restrictive feeding in the weight range from weaning to 40 kg body weight (In-40A) resulted in a reduced daily gain; however, following transfer to indoor facilities and ad libitum feeding these pigs compensated in growth and the overall daily gain did not differ from the In-A control pigs. Pigs fed restrictively from weaning to 80 kg body weight were unable to compensate completely following transfer to indoor facilities. Out-R pigs had the lowest overall daily gain, while In-A pigs and Out-A pigs had similar daily gain. Meat quality assessments were performed on longissimus dorsi (LD) samples from a subsample of 100 pigs (2 castrates and 2 female pigs from each treatment in each replicate). Compared to meat from either ad libitum treatments (In-A and Out-A), meat from Out-R and In-80A pigs was less red due to a lower pigmentation, and had a higher ratio of polyunsaturated:saturated fatty acids. In addition, Out-R female pigs had numerically (6–10 Newton) higher shear force than In-A and Out-A. Treatments did not affect the concentration of α-tocopherol of meat. Introducing a finishing period with free access to concentrates following 40 kg body weight until slaughter prevented the deterioration in meat quality. However, a finishing period following 80 kg body weight was not sufficient. In conclusion, ad libitum feeding in the organic production system gave superior meat quality compared to a restrictive feeding strategy. However, including a finishing period indoors with ad libitum feeding of concentrates may prevent the detrimental effect of restrictive feeding on meat quality.  相似文献
