An in-home beef study evaluated consumer ratings of clod steaks (n = 1,264) as influenced by USDA quality grade (Top Choice, Low Choice, High Select, and Low Select), city (Chicago and Philadelphia), consumer segment (Beef Loyals, who are heavy consumers of beef; Budget Rotators, who are cost-driven and split meat consumption between beef and chicken; and Variety Rotators, who have higher incomes and education and split their meat consumption among beef, poultry, and other foods), degree of doneness, and cooking method. Consumers evaluated each steak for Overall Like, Tenderness, Juiciness, Flavor Like, and Flavor Amount using 10-point scales. Grilling was the predominant cooking method used, and steaks were cooked to medium-well and greater degrees of doneness. Interactions existed involving the consumer-controlled factors of degree of doneness and(or) cooking method for all consumer-evaluated traits for the clod steak (P < 0.05). USDA grade did not affect any consumer evaluation traits or Warner-Bratzler shear force values (P > 0.05). One significant main effect, segment (P = 0.006), and one significant interaction, cooking method x city (P = 0.0407), existed for Overall Like ratings. Consumers in the Beef Loyals segment rated clod steaks higher in Overall Like than the other segments. Consumers in Chicago tended to give more uniform Overall Like ratings to clod steaks cooked by various methods; however, consumers in Philadelphia gave among the highest ratings to clod steaks that were fried and among the lowest to those that were grilled. Additionally, although clod steaks that were fried were given generally high ratings by consumers in Philadelphia, consumers in Chicago rated clod steaks cooked in this manner significantly lower than those in Philadelphia. Conversely, consumers in Chicago rated clod steaks that were grilled significantly higher than consumers in Philadelphia. Correlation and stepwise regression analyses indicated that Flavor Like was driving customer satisfaction of the clod steak. Flavor Like was the sensory trait most highly correlated to Overall Like, followed by Tenderness, Flavor Amount, and Juiciness. Flavor Like was the first variable to enter into the stepwise regression equation for predicting Overall Like, followed by Tenderness and Flavor Amount. For the clod steak, it is likely that preparation techniques that improve flavor without reducing tenderness positively affect customer satisfaction.  相似文献

依据猪小卫星DNA序列设计了1对引物,建立了PCR鉴定生、熟猪肉的方法。应用本方法特异地扩增出预期的猪307bp的DNA片段,其检测敏感度对生猪肉达38.6fgDNA,对熟猪肉和高压猪肉为0.375fg全基因组DNA。运用该引物仅可扩增生猪DNA的单一片段,而对马、牛、羊等12种动物肉的DNA扩增则呈阴性。应用本法对63份生、熟猪肉进行鉴定,正确率为100%,对各种样品检测,均可在6h内完成。  相似文献

The objective of this research was to evaluate the consumer-controlled factors of cooking method and degree of doneness on Top Choice, Low Choice, High Select, and Low Select top sirloin steaks. The in-home product test was conducted in Chicago, Houston, Philadelphia, and San Francisco. Consumers (n = 2,212) evaluated each top sirloin steak for overall like (OLIKE), tenderness (TEND), juiciness (JUIC), flavor desirability (DFLAV), and flavor intensity (IFLAV) using 23-point hedonic scales. Top sirloin steaks, regardless of city, were consistently cooked to well done or higher degrees of doneness. Dry-heat methods such as outdoor grilling, broiling, and indoor grilling were the most frequent cooking methods used. Four significant interactions existed for OLIKE: USDA quality grade x cooking method (P = .02), city x cooking method (P = .0001), city x degree of doneness (P = .01), and cooking method x degree of doneness (P = .009). Greater differences were found between cooking methods within USDA quality grade than between USDA quality grades within cooking method. Consumers in Houston rated steaks cooked by outdoor grilling higher than those from the other cities, and steaks cooked by indoor grilling were rated the highest among all cooking methods by consumers in Chicago. In Chicago, steaks cooked to more advanced degrees of doneness tended to receive higher ratings, but few differences between degrees of doneness in the other three cities were detected. For outdoor grilling, broiling, and pan-frying, the trend was for OLIKE ratings to decline as degree of doneness increased. The lowest customer satisfaction ratings tended to be given to top sirloin steaks cooked to more advanced degrees of doneness, and consumers most frequently cooked steaks to at least the well done stage. Consumer information programs or the development of postmortem techniques that would ensure acceptable palatability of top sirloin steaks may need to be developed.  相似文献

Consumer OLIKE scores were the highest (P < .05) for steaks cooked to a medium rare or lesser degree of doneness. Consumers preferred (P < .05) medium and well done or more degrees of doneness over medium well. The interaction of city x cooking method was significant for all steak palatability attributes. The differences in consumer preparation techniques among cities present challenges for the beef industry to develop market-specific promotional campaigns.  相似文献

Restaurant-ready (21-d aged, needle tenderized) loin steaks (strip, S; and T-bone, TB) representing three portion sizes (227, 284, and 340 g for S; 397, 454, and 510 g for TB) were portioned from 71 low-Choice beef carcasses representing seven ribeye size groups (70.9 cm2 and less to 103.2 cm2 and greater, in 6.3-cm2 increments). Steaks (n = 568) were cooked on a grooved grill to temperatures of either 67 or 77 degrees C and evaluated for cooking characteristics, sensory attributes (n = 284), and shear force (n = 284) to identify optimal ribeye areas for portioned steaks. As expected, thickness of all portioned steaks decreased (P < .05) as ribeye size increased, whereas thickness of steaks increased (P < .05) as portion size increased. The S were significantly thicker than TB. The TB cooked faster (P < .05) than did S for ribeye areas 77.4 to 83.8 cm2 in the average portion sizes and for ribeye areas 71.0 to 96.6 cm2 in the large portion sizes. However, S cooked significantly faster than did TB for ribeye areas less than 70.9 cm2 in the average portion sizes. The S had higher (P < .05) initial tenderness scores and lower (P < .05) shear values than did TB. Initial tenderness scores were lower (P < .05) for ribeye areas greater than 103.2 cm2 compared with ribeye areas less than 83.8 cm2 and 90.3 to 96.6 cm2, with all others being intermediate. Shear force tended (P = .08) to follow the initial tenderness results. The S cooked to both end point temperatures, and TB cooked to 67 degrees C had higher (P < .05) initial tenderness scores than did TB cooked to 77 degrees C. Tenderness was reduced in TB cooked to higher temperatures as well as in S and TB portioned from ribeye areas greater than 103.2 cm2. Steaks portioned from carcasses with ribeye areas between 77.4 to 96.6 cm2 can optimize both cooking time and tenderness for the foodservice sector.  相似文献

Our objectives were to examine the effects of prerigor excision and rapid chilling vs. conventional carcass chilling of two muscles on proteolysis and tenderness during the postmortem storage, as well as the effects of fast and slow rates of cooking on myofibrillar characteristics and tenderness. The longissimus thoracis (LT) and triceps brachii (TB), long head muscles were removed 45 min after exsanguination from the left side of 12 carcasses and chilled in an ice bath to induce cold shortening (excised, rapidly chilled). At 24 h postmortem, the corresponding muscles were removed from the right side (conventionally chilled). All muscles were cut into 2.54-cm-thick steaks and assigned to one of two postmortem times (1 or 14 d), and to raw and cooking treatments. Steaks were cooked at 260 degrees C (FAST) or 93 degrees C (SLOW) in a forced-air convection oven to an internal temperature of 70 degrees C. Cooking loss, cooking time, and Warner-Bratzler shear force (WBSF) were measured on cooked steaks. Sarcomere length (SL) and the extent of proteolysis of desmin were measured on raw and cooked steaks. As expected, the excised, rapidly chilled muscles had a much more rapid (P < 0.05) temperature decline than those that were conventionally chilled. The excised, rapidly chilled treatment resulted in shorter (P < 0.05) SL, and SL was shorter (P < 0.05) in LT than in TB steaks. Raw steaks had longer (P < 0.05) SL than cooked steaks, regardless of chilling treatment. The FAST cooking resulted in shorter (P < 0.05) SL than SLOW cooking in conventionally chilled steaks, but cooking rate had no effect (P > 0.05) on SL of rapidly chilled steaks. Generally, TB steaks required longer (P < 0.05) cooking times and had higher (P < 0.05) cooking losses than LT steaks, and FAST-cooked steaks had greater (P < 0.05) cooking losses than SLOW-cooked steaks. Rapidly chilled steaks had less (P < 0.05) degradation of desmin than conventionally chilled steaks (31 vs. 41%). Aging for 14 d increased (P < 0.05) desmin degradation. Rapid chilling of muscles resulted in much higher (P < 0.05) WBSF values, whereas aging resulted in lower (P < 0.05) WBSF values. The SLOW-cooked TB steaks were more tender (P < 0.05) than FAST-cooked TB steaks and LT steaks cooked at either rate. Excised, rapidly chilled muscles underwent proteolysis, but it occurred at a slower rate during the first 24 h postmortem than it did in conventionally chilled muscles. Cooking rate did not affect tenderness of LT steaks, but SLOW cooking resulted in more tender TB steaks.  相似文献

The highest ratings were given by consumers in Houston, and the lowest ratings were given by consumers in Philadelphia (P < .05). There were two interactions for OLIKE: USDA quality grade x degree of doneness (P = .002) and degree of doneness x cooking method (P = .02). Higher ratings generally were given to steaks cooked to medium rare or less or to very well degrees of doneness. Stir-frying, braising, and simmering and stewing were preferred at lower degrees of doneness. Customer satisfaction with the top round steak is very dependent on how it is cooked and by whom it is consumed.  相似文献

The objective of this study was to determine the effect of sampling methodology on the relationship between longissimus tenderness and measures of biochemical meat traits. Sampling methodology included measurements of sarcomere length, collagen concentration, and postmortem desmin proteolysis on raw samples and measurements of these same traits on the same cooked meat used for shear force measurement. Twenty crossbred steers and 20 crossbred barrows were used for these studies. The beef longissimus thoracis were vacuum-packaged, stored at 2 degrees C until 14 d postmortem, then frozen and stored at -30 degrees C. The pork longissimus thoracis et lumborum were vacuum-packaged, stored at 2 degrees C until 7 d postmortem, then frozen and stored at -30 degrees C. Trained sensory panel tenderness rating ranged from 3.1 to 7.6 for beef and 4.1 to 7.4 for pork. The coefficient of variation was lower for sarcomere length than for all other traits. Simple correlation coefficients between measurements on raw and cooked samples were 0.58 (beef) and 0.11 (pork) for sarcomere length, 0.66 (beef) and 0.59 (pork) for collagen, and 0.74 (beef) and 0.76 (pork) for desmin degradation. Simple correlation coefficients between biochemical traits and measures of tenderness (Warner-Bratzler shear force and trained sensory tenderness rating) were higher or not different for cooked compared to raw samples. Correlation coefficients between biochemical traits and tenderness rating were 0.38 (raw) and 0.22 (cooked) for sarcomere length, -0.12 (raw) and -0.45 (cooked) for collagen, and 0.48 (raw) and 0.80 (cooked) for desmin degradation in beef longissimus and 0.14 (raw) and 0.15 (cooked) for sarcomere length, -0.38 (raw) and -0.33 (cooked) for collagen, and 0.53 (raw) and 0.67 (cooked) for desmin degradation in pork longissimus. The coefficients of determination for explaining variation in tenderness rating using sarcomere length, collagen concentration, and desmin degradation for raw and cooked samples were 0.43 and 0.73 (beef) and 0.48 and 0.57 (pork), respectively. This study indicates that measurements of biochemical traits on the same cooked meat as used for shear force determination account for more of the variation in measures of tenderness than biochemical measurements made on a separate raw sample.  相似文献

Bovine viral diarrhea virus (BVDV) is a pestivirus that is enzootic in most cattle populations throughout the world. This virus is present throughout the body of persistently infected (PI) cattle. Previous research has not assessed the cooking temperature at which BVDV in meat from PI cattle can be inactivated. Therefore, muscle tissue from 6 PI cattle was harvested, refrigerated, frozen, and heated to various internal temperatures. The concentration of virus present was determined by virus isolation. Average cell culture infective doses (50% endpoint; CCID(50)) of BVDV per gram of frozen, uncooked meat from PI cattle were 10(5.85) CCID(50)/g of whole cuts and 10(6.02) CCID(50)/g of ground meat. The virus in whole and ground meat was consistently inactivated when cooked to temperatures greater than or equal to 75°C. A second objective of this research was to thoroughly reassess if Vero cells were permissive to BVDV infection in our laboratory to provide further indication of whether primates, including humans, might be susceptible to BVDV. Vero cells were not permissive to infection with any of 43 different strains of BVDV that readily replicated in Madin Darby bovine kidney cells. In conclusion, this bovine pathogen, which is not considered to be a human pathogen, can be inactivated by cooking ground or whole cuts of meat to 75°C or higher. Care should be taken to ensure that susceptible hosts such as pigs are not fed improperly cooked meat, meat by-products, or waste food originating from PI cattle.  相似文献

The i.m. tenderness variation was examined within four beef chuck muscles, the infraspinatus (IF), supraspinatus (SS), triceps brachii (TB), and serratus ventralis (SV). The IF, SS, TB, and SV muscles were cut into 2.5 cm thick steaks perpendicular to the long axis of the muscle. An identification tag was placed on each steak, consisting of a muscle identification number, steak number, and orientation of the steak. Steaks were vacuum-packaged and stored at -22 degrees C until subsequent analysis. Steaks were thawed at 1 degrees C and cooked on electric broilers to an internal temperature of 71 degrees C. One core was removed from each 2.5-cm x 2.5-cm section parallel to the muscle fiber and sheared once to determine Warner-Bratzler shear force (WBSF). The SS had an overall WBSF mean of 5.43 kg (SD = 2.20 kg) with no tenderness difference (P = 0.43) among steak locations. The IF had an overall WBSF mean of 3.16 kg (SD = 1.01 kg) with no tenderness difference (P = 0.51) among steak locations. The SV had a mean WBSF value of 4.37 kg (SD = 1.27 kg) with tenderness variation (P < 0.05) among steak locations; however, tenderness variations were not dispersed in a discernible pattern. The TB had a mean WBSF value of 4.12 kg (SD = 1.26 kg) with lower (P < 0.05) shear force in the middle region of the TB, and the distal and proximal ends were tougher (P < 0.05). Results of this study provided a reasonably detailed mapping of the tenderness regions within the IF, SS, TB, and SV muscles, and this information could be used to add value to the beef chuck by cutting and marketing consistently tender regions.  相似文献

An in-home beef study evaluated consumer ratings of top round steaks (semimembranosus) as influenced by USDA quality grade (top Choice or high Select), city (Chicago or Philadelphia), consumer segment (beef loyalists = heavy consumers of beef; budget rotators = cost-driven and split meat consumption between beef and chicken; and variety rotators = higher incomes and education and split meat consumption among beef, poultry, and other foods), degree of doneness, cooking method, and marination. Consumers evaluated each steak for overall like, tenderness, juiciness, flavor like, and flavor amount using 10-point scales (1 = dislike extremely, not at all tender, not at all juicy, dislike extremely, and none at all to 10 = like extremely, extremely tender, extremely juicy, like extremely, and an extreme amount of flavor, respectively). Quality grade affected several consumer sensory traits, with top Choice receiving higher (P < or = 0.004) tenderness, juiciness, and flavor like scores than high Select. Consumers in Chicago rated steaks cooked "medium and less" higher for overall like, tenderness, juiciness, flavor like, and flavor amount than those in Philadelphia (city x degree of doneness; P < or = 0.020). Steaks braised by customers in Philadelphia received among the highest scores for overall like, tenderness, juiciness, flavor like, and flavor amount compared with any cooking method used by customers in Chicago (cooking method x city; P < or = 0.026). Overall like and flavor amount ratings were least (P < 0.05) for steaks that were marinated and cooked to "medium and less" degree of doneness (marination x degree of doneness; P < or = 0.014). Braised steaks received among the highest values for overall like, tenderness, juiciness, flavor like, and flavor amount when cooked to "medium and less" or "medium well and more" (cooking method x degree of doneness; P < or = 0.008). Correlation and stepwise regression analysis indicated that flavor like was pivotal in customers' satisfaction with top round steaks, and was the sensory trait most highly correlated to overall like, followed by tenderness, flavor amount, and juiciness. Preparation of top round steaks was crucial in consumers' likes and dislikes, and by improving flavor, higher consumer satisfaction may be achieved.  相似文献

Duck meat consumption is low but steady in the United States (US), while rapidly expanding in other countries. The duck industry is moving from a traditional whole carcass product towards deboned breast fillets and other portions, which has prompted strain selection for breast weight and yield. The effect of bird strain was therefore evaluated for fillet weight, yield, and breast meat quality characteristics. Eighty butterflied paired fillets were obtained from each of 4 Pekin duck strains after carcasses were sized by weight at the processing plant (n = 640). All fillets were weighed and then half of the fillets were evaluated for color. One fillet from each carcass-pair was either frozen or kept fresh for cooking, reweighing, and subsequent color analysis (Commission Internationale de I'Eclairage (CIE) lightness L*, redness a*, and yellowness b*). Both fillets in each carcass-pair were evaluated using Allo–Kramer (AK) and Warner–Bratzler (WB) shear. Strain affected (P < 0.05) raw and cooked fillet weight. Strain C, with the largest BW and selected for both breast yield and growth rate, had higher raw and cooked breast weight. Cooked yield was not affected by strain and averaged 64.4%. Neither AK nor WB shear values were affected by strain, and averaged 4.8 kg/g and 4.2 kg, respectively. Strain had a slight but significant effect on color, affecting lightness (L*) values of all categories, and redness (a*) values of raw and cooked meat. Freezing and thawing produced large and significant thaw losses ranging from 10.4 to 13.6%; differing losses depended on the strain of duck. Duck strain affected breast fillet weights and lightness to a slight extent, but not cook yield or shear values.  相似文献

选择相同营养模式下低月龄组(28~30月龄)12头、高月龄组(32~34月龄)8头新疆褐牛阉牛进行屠宰,分别对胴体性状、营养成分、部分食用品质指标进行测定和比较分析,旨在探索新疆褐牛阉牛生产高档牛肉的适宜月龄。结果表明,高月龄组大理石花纹、胴体等级、脂肪、肉色均优于低月龄组,低月龄组脂肪色泽、水分、蛋白质、蒸煮损失、剪切力值优于高月龄组,且脂肪、肉色L*值差异显著(P<0.05),其余组间差异均不显著(P>0.05);上脑、里脊、外脊作为高档牛肉,除肉色、pH外,脂肪、蛋白质、水分、蒸煮损失、剪切力值指标均优于其他部位,表现出了极好的营养价值和食用品质。28~34月龄阶段的新疆褐牛阉牛可以生产高档牛肉,其肉品都可作为牛排和涮牛肉的原材料。  相似文献

In this research,12 heads of 28 to 30 months (low months age group) and 8 heads of 32 to 34 months (high months age group) Xinjiang Brown cattle steers which fed in the same mode of nutrition were chose for the slaughter test,in which the carcass traits,nutrient composition and some edible quality index were measured and comparative analyzed,a research which through comparative analysis the carcass traits and meat quality of nutritional components of different months of Xinjiang Brown cattle steers was carried out.The results indicated that the marbling,carcass grade,fat,meat color of high months age group were better than that of low months age group,the traits of the low months age group on fat color,moisture,protein,cooking loss and shear force value were better than that of high months age group,and there were significant difference on the traits of fat and meat color L* between the two groups (P<0.05),while the differences of other traits between them were not significant (P>0.05);As high-grade beef,in addition to the traits of meat color and pH value of the chunk roll,tenderloin and striploin,each site of the meat traits on the fat,protein,moisture,cooking loss,shear force value indicators were all better than other parts,and showed the best of nutritional value and edible quality.28 to 34 months of Xinjiang Brown cattle steers could produce high-grade beef,the meat could be used as the raw materials of steak and boiled beef.  相似文献

The objective of this multiple-phase study was to determine the accuracy of an on-line near-infrared (NIR) spectral reflectance system to predict 14-d-aged cooked beef tenderness. In phase I, 292 carcasses (140 US Select, 152 US Choice) were selected (d 2) from 2 commercial beef processing facilities. After carcass selection, longissimus lumborum (LL) muscle sections (ribs 9 to 12) were individually identified, vacuum-packaged, and transported to the Oklahoma State University Meats Laboratory, where a 2.54-cm-thick steak (n = 1) was fabricated and stored in refrigerated conditions (1 degrees C +/- 1). Following a 30-min oxygenation period, a NIR spectral scan was obtained on the 12th-rib LL steak. Steaks (d 3) were individually vacuum-packaged and aged at 4 degrees C for a total of 14 d before cooking slice shear force (SSF) analysis. In phases II and III, 476 carcasses (258 US Select, 218 US Choice) were immediately NIR scanned after carcass presentation to in-plant USDA grading personnel. In a similar fashion, all LL steaks were aged (1 degrees C +/- 1) for 14 d before cooking (70 degrees C) and conducting SSF. Of the phase I and II samples, 39 (6.77%) were categorized as being tough (i.e., >/= 25 kg of SSF after the 14-d postmortem aging period). Of these 39 tough samples, 20 (3.7% error rate) were correctly placed in the 90% certification level. Another 10 tough samples were placed in the 80% certification level (2.0% error rate). The overall NIR certified tender group was 1.67 kg more tender (P < 0.05) than LL samples from the noncertified samples. When the NIR predicted samples to be tough, 10% of the samples were eliminated from the phase I and II LL populations at 90% certification. The population SSF mean improved in excess of 6.5 kg. For phase III, SSF evaluation by an independent third party indicated the NIR system was able to successfully sort tough from tender LL samples to 70% certification levels. It was concluded that NIR scanning offers an in-plant opportunity to sort carcasses into tenderness outcome groups for guaranteed-tender branded beef programs.  相似文献

Tannins were recently evaluated as feed additives in order to increase antioxidant compounds in animal diet, mainly to enhance resistance to lipid oxidation in meat. Rabbit meat is one of the most susceptible animal products, thus the main aim of this study was to evaluate the capacity of tannins to elongate shelf life of rabbit meat. Ninety hybrid rabbits were fed with three different diets: basal diet (control, C) and basal diet supplemented with 0.3% or 0.6% of tannins mix. Meat samples were refrigerated as raw at 4°C up to 11 days and analysed both as raw and cooked for physical‐chemical characteristics, fatty acids profile, lipid oxidation and antioxidant capacity. Results showed that dietary tannins affected meat colour of raw samples (mostly yellowness). Lipid peroxidation (TBARS) of raw samples was lower in tannins group than C group; a further inhibition of peroxidation was showed also in cooked samples only by the highest dose of tannins mix. Moreover, antioxidant capacity (ABTS) of raw samples increased with the percentage of tannins. In conclusion, supplementation with 0.6% of tannins mix seems to positively affect the lipid peroxidation and antioxidant capacity of meat without modifying the intrinsic characteristics of rabbit meat.  相似文献

Four experiments were conducted, using carcasses from cattle identified for anticipated variability in tenderness (Exp. 1, 2, and 3) and carcasses selected for variability in physiological maturity and marbling score (Exp. 4), to evaluate the ability of the Tendertec Mark III Beef Grading Probe (Tendertec) to predict tenderness of steaks from beef carcasses. In Exp. 1, 2, and 3, longissimus steaks were aged for different periods of time, cooked to a medium degree of doneness (70 degrees C), and evaluated for Warner-Bratzler shear force (WBS) and trained sensory panel ratings. In Exp. 4, longissimus steaks were aged 14 d and cooked to 60, 65, 70, 75, or 80 degrees C for WBS tests and to 65 or 75 degrees C for sensory panel evaluations. Tendertec output variables were not correlated with 1) 24-h calpastatin activity, steak WBS (following 1, 4, 7, 14, 21, or 35 d of aging), or d-14 sensory panel tenderness ratings in Exp. 1 (n = 467 carcasses) or 2) 14-d WBS in Exp. 2 (n = 202 carcasses). However, in Exp. 3 (n = 29 carcasses), Tendertec output variables were correlated (P < 0.05) with tenderness of steaks aged 1, 21, 28, or 35 d, and we were able to separate carcasses into groups yielding tough, acceptable, and tender steaks. In Exp. 4 (n = 70), Tendertec output variables were correlated (P < 0.05) with steak WBS at 60 degrees C and with steak ratings for muscle fiber tenderness, connective tissue amount, and overall tenderness at 65 degrees C, but these relationships weakened (P > 0.05) as degree of doneness increased. Consequently, Tendertec output variables only were effective for stratifying carcasses according to tenderness when steaks from those carcasses in Exp. 4 were cooked to a rare or medium-rare degree of doneness. Although Tendertec was able to sort carcasses of older, mature cattle based on tenderness of steaks at some cooked end points, it failed to detect tenderness differences in steaks derived from youthful carcasses consistently, and was thus of limited value as an instrument for use in improving the quality, consistency, and uniformity of the U.S. fed-beef supply.  相似文献

An experiment was conducted to provide information on the development of rancidity in precooked frozen chicken pieces. Emphasis was placed on measuring the effects of storage time, batter formula, cooking of different pieces, 2‐thio‐barbituric acid (TBA) number, yield, moisture and fat content of the frozen product.

Steam cooking of chicken pieces reduced the yield when compared to microwave cooking. This method of precooking decreased the yield of the thigh more than that of the other parts cooked. The breast retained a higher percentage of batter than did either the thigh or drum. This higher yield for the breast continued after final cooking.

By correcting for moisture content, no differences in development of rancidity was observed between the two cooking methods. The thigh‐drum combination was more rancid than the breast. No difference was noted in the development of rancidity for the precooked chicken stored for 6, 8 or 10 months. Breast meat contained less extractable fat, when based on dry sample weight, than did the thigh‐drum meat. Chicken cooked by steam contained more moisture than did those parts cooked by microwave.  相似文献

1. An experiment was conducted to assess the effect of tetrasodium pyrophosphate and sodium bicarbonate on colour and sensory attributes of pre- and post-chilled breast meat. 2. Three groups of 6 halves of breasts (pre-chill) immediately after slaughter were treated with 3% tetrasodium pyrophosphate, 3% sodium bicarbonate in 2% NaCl or 2% NaCl alone (control); the remaining 6 halves (post-chill) were stored overnight at 4 degrees C and then treated similarly. Both the pre- and post-chill samples were held at 4 degrees C for 24 h and pH, water holding capacity, cooking loss, CIE colour values and sensory attributes were recorded. 3. Chilling had few effects on the meat characteristics measured in this study. 4. Treatment with phosphate and bicarbonate increased pH in both the pre- and post-chill groups. Treated breasts exhibited lower L* and higher a* value (more red) than controls. 5. A sensory evaluation study revealed improvements in colour and other sensory attributes of cooked broiler breast meat in all treated samples compared to the control. 6. The findings suggest that tetrasodium pyrophosphate and sodium bicarbonate, when injected post mortem, will have beneficial effects on several physico-chemical (pH, colour, WHC %, cooking loss) and sensory attributes of broiler meat. However, phosphate had a smaller effect than bicarbonate.  相似文献
