ABSTRACT

In the present study, the effect of fish gelatin coating (FG; 4%, w/v) containing oregano (Origanum vulgare L.) essential oil (OEO; 1.2% w/v) on shelf-life extension of rainbow trout (Oncorhynchus mykiss) fillet stored under refrigerated storage (4 ± 1ºC) was investigated. The control and the treated fish samples were analyzed periodically for chemical (pH; total volatile basic nitrogen, TVB-N; peroxide value, PV; thiobarbituric acid, TBA) and microbiological (total viable count, TVC; psychrotrophic count) characteristics. The FG + OEO treatment produced significantly lower (p < 0.05) TVB-N values as compared to control and FG-coated samples after Day 6 and until the end of the storage period. The TBA values remained low and were found to fluctuate during storage. Results showed that TVC exceeded 6 log CFU g?1 on Day 8 of storage for control and FG-coated samples and Day 12 for samples coated with FG + OEO. The reduction of 1.05 and 0.83 log CFU g?1 of psychrotrophic counts was achieved by FG + OEO coating in trout fillet (p < 0.05) as compared with control and FG-coated samples, respectively. Therefore, the incorporation of OEO into FG coating may be a promising method of maintaining the storage quality of the rainbow trout fillet stored at refrigerated temperature.  相似文献

The aim of this study was to investigate the quality changes of pasteurized soup prepared from smoked trout trimmings during 8 months of refrigerated storage at 3°C. Thiobarbituric acid (TBA, mg malonaldehyde/kg), total volatile content (TVB-N, mg N/100 g), total aerobic mesophilic plate count, pH value, color measurement, and sensory evaluation were used to determine quality changes. After 8 months of storage, TBA values reached 0.83 ± 0.09 mg malonaldehyde/kg. Despite a marked increase in the TBA value at Month 8, the soup was still of acceptable quality. The TVB-N value was close to the European Commission limit on fresh fish at Month 4, and further increase was not significant (p > 0.05). Total aerobic mesophilic count reached a maximum value of 4.15 ± 0.23 log cfu/g at Month 2 with 3.20 ± 0.02 log cfu/g at Month 8. The soup had an overall acceptability score of 7.16 ± 0.68 (“like moderately” on a 1- to 9-point hedonic scale). Results suggest that smoked trout trimmings can be used to maximize the value of co-products by producing a ready-to-eat soup.  相似文献

To investigate the effects of chitosan composite coatings for maintaining the quality of grass carp portions, indictors of microbiology (total bacteria count, TBC), chemistry (pH; total volatile basic nitrogen, TVB-N; 2-thiobarbituric acid, TBA; K-value), and sensory characteristics were analyzed periodically. The results showed that chitosan (1.5%, w/v) + acetic acid (1.0%, v/v) + tea polyphenol (TP, 0.5%, w/v) coating significantly (p ≤ 0.05) reduced growth of microorganisms as reflected in TBC, lipid oxidation as displayed in TBA, chemical spoilage as reflected in pH, TVB-N, K-value, and sensory characteristic scores compared to the control samples. The effect of chitosan (1.5%, w/v) + acetic acid (1.0%, v/v) + vitamin C (VC, 0.5%, w/v) coating was better than chitosan (1.5%, w/v) + acetic acid (1.0%, v/v) coating. Chitosan together with acetic acid and TP can be used as a type of preservative coating for grass carp portions under chilled storage.  相似文献

The objective of this study was to evaluate the effect of different forms and doses of rosemary on chemical, microbial, and sensory properties of rainbow trout fed nine different diets: control (C), 20 g.kg?1 rosemary powder (20RP), 40 g.kg?1 rosemary powder (40RP), 0.3 g.kg?1 rosemary extract (0.3RE), 0.6 g.kg?1 rosemary extract (0.6RE), 0.15 g.kg?1 rosemary nanopowder (0.15RNP), 0.3 g.kg?1 rosemary nanopowder (0.3RNP), 0.15 g.kg?1 butylated hydroxyanisole (BHA) (0.15BHA), and 0.3 g.kg?1 BHA (0.3BHA). After 8 weeks’ feeding, the fish fillets were sampled on the 1st, 4th, 8th, 12th, and 16th days and then stored on 4°C. Lower value of pH, peroxide value (PV), total volatile base nitrogen (TVB-N), free fatty acids (FFA), and thiobarbituric acid (TBA) were reported in fish fed with RP, RE, RNP, and BHA; among them, RNP groups had the lowest properties (p < 0.05). Furthermore, lower total viable aerobic bacterial counts (TVC) and psychotropic counts (PTC) were observed in the fillets of the fish fed with rosemary treatments, especially in RNP treatments (7.52–9.41 log10 CFU.g?1), along with a slower spoilage in terms of sensory factors (texture, color, odor, and overall) on the 16th day. Finally, use of natural antioxidant nanorosemary in the diet may positively affect fish fillet quality and delay post-mortem deterioration.  相似文献

The aim of this study was to evaluate the effects of chitosan-gelatin coating with two different methods (composite and bi-layer) in combination with pomegranate peel extract (PPE) on the microbiological (mesophilic bacteria, psychrotrophic bacteria, and Enterobacteriaceae) and chemical (total volatile bases-nitrogen (TVB-N), pH, thiobarbituric acid (TBA), and free fatty acid (FFA)) properties of Belanger’s croaker (Johnius belangerii) fillets during refrigerated storage (4 ± 1°C). In this study, composite coating (CC), bilayer coating (BC), CC+PPE, and BC+PPE led to 6.88, 7.00, 6.52, and 6.32 log10 CFU/g reduction in mesophilic bacteria, 6.67, 7.02, 5.35, and 4.21 log10 CFU/g in PTC and 2.99, 2.71, 2.37, and 2.41 log10 CFU/g, compared with control sample for 16 days storage time, respectively. Chitosan-gelatin coating enriched with PPE has retarding effects on spoilage of fish samples, thus extending the shelf life during refrigerated storage. The quality characteristics of croaker treated with chitosan-gelatin coating combined with PPE were better than those treated by chitosan-gelatin coating or PPE alone during the storage, exhibiting that there is a synergistic effect between chitosan-gelatin coating and PPE. The bi-layer coating was better than one composite coating in combination with PPE in reducing lipid oxidation of fillets.  相似文献

To investigate the biopreservative effectiveness of pediocin ACCEL on refrigerated seafoods, fresh fish fillets were immersed in various concentrations of pediocin ACCEL and then stored at either 4° or 0°C. Samples treated with nisin were used as a positive control. The aerobic plate counts (APC) of samples with bacteriocins were <2.0 log10cfu/g (log cfu/g) after 2 days storage at 0°C, except that with 1500 IU/mL of pediocin ACCEL. The APC of samples with nisin were >2.0 log cfu/g after 2 days storage, while those with pediocin ACCEL occurred after 1 day storage at 4°C. In refrigerated seafoods, pediocin ACCEL and nisin suppressed the growth of inoculated Listeria monocytogenes during 2- and 1-week storage at 4°C, respectively. Compared with nisin, the pediocin ACCEL was considered to be more effective on the suppression of L. monocytogenes growth in refrigerated seafoods during 2-week storage at 4°C.  相似文献

Chitosan coating and plastic wrap coating were investigated for their effects on the quality of grass carp fillets stored at 4 ± 1ºC for a period of 20 days. The fillets were divided into groups of untreated (Control), wrapped with sterile preservative film (PE), and chitosan-treated (1, 2, and 2.5% w/v corresponding to CH1, CH2, and CH2.5, respectively). The final result demonstrated that chitosan coating has positive effects on the microbial inhibition of total volatile count (TVC), lactic acid bacteria (LAB), Enterobacteriaceae, Pseudomonas, H2S-producing bacteria (including Shewanella putrefaciens), and Staphylococcus. With regard to the results of biogenic amines (BAs), putrescine (PUT) and histamine (HIS) were the major amines, and their concentration was significantly (p < 0.05) higher in Control and PE than in chitosan-coated fillets at the end of storage. The final concentration in Control, PE, CH1, CH2, and CH2.5 was 143.7, 160.1, 83.0, 59.4, and 44.2 mg/kg for PUT and 228.0, 57.1, 4.1 3.2, and 2.9 for HIS, respectively. Chitosan coating was found to inhibit the increase of total volatile base nitrogen (TVB-N), microbial population, and total BAs and prolong the shelf life of grass carp fillets. However, sterile plastic wrap coating had little positive effect on maintaining the quality of grass carp fillets during refrigerated storage.  相似文献

This study investigated a preparation of chitosan/rosemary extract nanoparticles (CS/RE-NPs) based on the principle of ionic gelation and their application for inhibiting grass carp lipid oxidation. CS/RE-NPs were found to have a rosemary extract (RE) encapsulation efficacy of 40.33%, average particle size of 199.90 nm, and zeta-potential of 35.60 mV. Structural analysis using UV–vis spectroscopy, Fourier transform infrared spectroscopy (FTIR), differential scanning calorimetry (DSC), and transmission electron microscopy (TEM) indicated that the RE s were well incorporated into the CS-NPs. Treatment of the CS/RE-NPs inhibited lipid oxidation of the grass carp during cold storage, and the peroxide value (PV), thiobarbituric acid-reactive substance (TBARS) value, and lipoxygenase (LOX) activity of the CS/RE-NP-treated samples were lower than those of RE and CS-NP-treated samples, respectively. CS/RE-NP-treated samples also slowed the growth of bacteria, enhanced the organoleptic quality, and prolonged the shelf life of grass carp. This study suggested that CS/RE-NPs can be used as an antioxidant delivery system to inhibit lipid oxidation and improve food quality.  相似文献

An ozonated water treatment system was designed for the sanitation of shucked oysters (Crassostrea plicatula). The effects of ozone (O3) on shelf life were examined under refrigerated conditions (4 ± 1°C). Microbiological, chemical, and color quality were also evaluated by determining total aerobic plate counts (APC), total volatile basic nitrogen (TVB-N), thiobarbituric acid (TBA), and L, a, and b values. Single and orthogonal experiment results showed that oysters treated with 9 mg/L of O3 in aqueous solution (oyster: ozonated water = 1:6, w/v) for 10 min at 5°C significantly reduced the total APC by about 2-log—from 4.97 ± 0.11 to 2.93 ± 0.17 log CFU/g (p < 0.05). O3 treatment did not cause significant changes in TVB-N, TBA, a, and b values, although L values were significantly affected. During refrigerated storage, O3-treated samples expressed lower TVB-N, TBA, a, and b values and higher L values than control samples. The shelf life of O3-treated samples was 20 to 25 days, while that for the controls was 5 to 10 days. The current study confirms that treatment with ozonated water can effectively prolong the shelf life and maintain the quality of oysters.  相似文献

ABSTRACT

The objective of the current study was to determine the effects of chitosan (CH) coatings containing Mentha spicata essential oil (MSO; 0.2 and 0.4%) and zinc oxide nanoparticle (ZnO; 0.2 and 0.4%) on chemical (total volatile basic nitrogen (TVB-N), 2-thiobarbituric acid reactive substances (TBARS) and peroxide value (PV)), microbial (total viable count, psychrotrophic count, Pseudomonas spp., and Enterobacteriaceae) and sensory (odor, color, and overall acceptability) properties of raw rainbow trout fillets during 14 days of refrigerated storage. Final microbial population of CH + MSO 0.4% + ZnO 0.4% and CH + MSO 0.4% + ZnO 0.2% retarded approximately 3–5 log CFU/g as compared to control groups (P < 0.05). At the end of storage time in control samples, TVB-N, TBARS, and PV reached 49.3 mg N/100 g, 3.31 mg malonaldehyde/kg, and 2.04 meq peroxide/kg lipid, while the values for the treated samples with MSO (0.2 and 0.4%) in combination with ZnO (0.2 and 0.4%) remained lower than 25 mg N/100 g, 2 mg malonaldehyde/kg, and 1.1 meq peroxide/kg lipid, respectively. The results indicate a potential use of CH coating containing MSO and ZnO as an effective type of antimicrobial packaging to maintain quality of rainbow trout fillets.  相似文献

In this study, the effects of natural and artificial colorants on the shelf life of hot smoked garfish were investigated in terms of its chemical, microbiological, and sensory quality. Turmeric and Sunset Yellow FCF were used as the natural and artificial colorants, respectively. The amount of total volatile basic nitrogen (TVB-N) and thiobarbituric acid (TBA), counts of total mesophilic aerobic bacteria, total psychrophilic aerobic bacteria, total yeast and molds increased during the storage (p < 0.05). The results showed that turmeric and Sunset Yellow FCF had a significant effect on pH value and salt content of hot smoked garfish samples during storage (p < 0.05). According to the sensory analysis results, the shelf life of hot smoked garfish stored at 4 ± 1ºC was determined as 17 days.  相似文献

Solutions of chitosan (2%, w/v), garlic essential oil (5%, v/v), and their combination (2%, w/v chitosan +5%, v/v garlic essential oil) were applied to the surface of grass carp fillets. Subsequently, sensory, microbiological analyses (total viable count (TVC), Pseudomonas spp., Aeromonas spp., and H2S-producing bacteria), and physicochemical changes (total volatile basic nitrogen (TVB-N), thiobarbituric acid reactive substances (TBARS), and centrifugation loss) of grass carp fillets were evaluated over a 16-day storage at 4 ± 1°C. The treated samples resulted in significantly (< 0.05) higher overall acceptance scores than the control from day 8. The TVC of grass carp fillets was reduced from the initial level (4.0 log CFU/g) to 2–3 log CFU/g when the fillets were treated with either garlic essential oil or chitosan solution. After 4 days of storage, the Pseudomonas spp. counts in the chitosan-treated samples were significantly lower (< 0.05) than the counts in control and samples treated with garlic essential oil. A lag phase of 6 days for the counts of H2S-producing bacteria of fish fillets that were treated with chitosan or the combination solution was observed. The combination of chitosan with garlic essential oil did not show synergistic effects, although it displayed a higher degree of antimicrobial efficacy with respect to the spoiled bacteria. However, the combination of chitosan with garlic essential oil was the most effective at inhibiting the formation of TVB-N. Samples that were treated with garlic essential oil displayed the highest TBARS levels on days 4 and 6 (< 0.05).  相似文献

Listeria monocytogenes presents a serious threat to consumer safety because it is resistant to various food storage techniques, including reduced or modified atmosphere packaging, refrigerated storage, and increased salt concentration. Edible coatings incorporated with natural antimicrobials have been suggested to control pathogenic and spoilage bacteria on a variety of meat products. In this study, edible zein‐based coatings incorporated with nisin and lemongrass essential oil (LGEO; 8%) were evaluated for antibacterial action against L. monocytogenes and spoilage organisms on fresh, cultured hybrid striped bass, Morone saxatilis × Morone chrysops, under two storage conditions (refrigerated or frozen) and two packaging types (polyvinyl chloride [PVC] and vacuum packing) over time. Corn‐zein‐based edible coatings were found to be an effective carrier for nisin and LGEO. Fillets coated with nisin showed the largest decrease in L. monocytogenes cell counts in both PVC and vacuum‐packaged samples in both refrigerated and frozen product, while fillets coated with LGEO showed intermediate inhibition of L. monocytogenes cell counts, with the strongest LGEO antibacterial effect being found in frozen product regardless of packaging. Both nisin and LGEO treatments were most effective in PVC‐packaged fillets compared to vacuum‐packaged fillets, but the difference in bacterial loads between packaging methods was minor. Bacterial loads on refrigerated product tended to increase slightly after 5‐d storage regardless of coating treatment or packaging, whereas bacterial loads on frozen product remained stable or decreased with time up to 60 d regardless of coating treatment or packaging. Data from the present study indicate that application of edible coatings incorporated with essential oils not only promotes food product safety but also may satisfy the preferences of consumers.  相似文献

ABSTRACT

The effect of dip treatment with solvent-free whole radish extract (WRE) on quality characteristics of Deccan mahseer steaks was evaluated during the chilled storage. In-vitro antioxidant activities of the extract were evaluated based on total phenolic and flavonoid contents, DPPH radical scavenging activity, and metal chelating ability prior to the dip treatment. The quality parameters, including total volatile base nitrogen (TVB-N), trimethylamine nitrogen (TMA-N), and free fatty acid (FFA), were significantly (p < .05) reduced in WRE treated steaks compared to the control (CT) steaks. WRE treatment of fish steaks significantly controlled the lipid oxidation parameters of thiobarbituric acid reactive substances (TBARS) and peroxide value (PV). Total plate count (TPC) of CT sample was higher than the treated sample and remained within the limit of 7 log10 cfu/g at the end of storage. As per the sensory analysis, shelf life of Deccan mahseer was determined to be 15 days for WRE treated steaks and 9 days for control steaks during chill storage. Based on the results, it can be concluded that WRE treatment can limit the progress of fish spoilage bacteria in fish steaks and can be used as a substitute for synthetic additives.  相似文献

This study was designed to determine if treatment with low dose X‐ray irradiation changes microbial quality (microbial load), safety (Listeria monocytogenes incidence), and sensory characteristics (aroma, appearance, and texture) of fresh aquacultured Channel catfish (Ictalurus punctatus) fillets during refrigerated storage. Fillets were treated to 0, 0.5, 1.0, and 1.5 kGy using an X‐ray irradiator and stored at 3°C for 17 days. Fillet aerobic plate count (APC), psychrotrophic plate count (PPC), total coliform count (TCC), and L. monocytogenes incidence were measured every 4 days during storage. A Difference-From-Control test was used to measure aroma, appearance, and texture. Fillet microbial counts were significantly different (p < 0.05) with time, irradiation dose, and the interaction of these two treatments. As expected, APC, PPC, and TCC increased as storage time increased. Overall L. monocytogenes incidence was 40%, 27%, 0%, and 7% at 0, 0.5, 1.0, and 1.5 kGy, respectively. Aroma of irradiated and non‐irradiated catfish fillets was significantly different, with greater aroma differences recorded as storage time increased due to progressional spoilage of the untreated controls. However, there were no significant aroma differences noted among the different irradiation doses. Neither appearance nor texture was significantly different between any treatments throughout testing. This study indicated that exposure to low dose X-ray irradiation improved the microbial quality and safety of fresh catfish fillets without affecting sensory acceptability at time of purchase.  相似文献

Research has shown that fresh fish is an extremely perishable food as compared to other food commodities. In this study, quality deterioration during storage of golden grey mullet (GGM) iced for 0, 6, and 12 h after landing was monitored. Microbiological indices (total viable count, TVC; psychrophilic counts, PTC; lactic acid bacteria, LAB; and Enterobacteriaceae counts, EBC), chemical parameters (pH; total volatile basic nitrogen, TVB-N; peroxide value, PV; thiobarbituric acid, TBA; and free fatty acids, FFA) values increased over the preicing duration. Delayed icing did not lead to significant increases (p > 0.05) in TVC, PTC, LAB, and EBC throughout the period of storage. All chemical indices increased during storage (p < 0.05). This study showed that sensorial analysis of GGM correlated well with microbiological analysis. Results of this study based on the microbiological and raw fish sensorial data indicated that the shelf life of GGM stored in ice immediately after catch was approximately 10–11 days, while the 6- and 12-h delays in icing shortened the shelf life to approximately 6–7 and 2–3 days, respectively.  相似文献

Essential oil incorporated alginate coating provides a novel way to improve the safety and shelf life of pangasius (Pangasianodon hypophthalmus) fillet. Oils from the leaves and buds of clove, flowering tops of rosemary, and dried seeds of thyme were incorporated separately in alginate coating. All the plant oils showed antibacterial activity, but the zone of inhibition was relatively larger for thyme oil. Alginate coating was performed using sodium alginate (1.5%), glycerol (10%), and calcium chloride (2%) and plant oil at 1% (v/v). The coated fillets were stored under chilled conditions and samples were analyzed for bacteriological, chemical, sensory, color, and texture parameters. Psychrotrophic counts crossed 7 log cfu/g by the 13th day and 15th day of chilled storage in control and plant oil treated fillets, respectively. The peroxide value of treated fillets was relatively low. Texture profile analysis indicated that plant oil incorporated alginate coating reduced the rate of loss of texture (softening) during chilled storage. Plant essential oil incorporated alginate gels were relatively better compared to control fillets in preserving pangasius fillet quality during chilled storage, and incorporation of thyme oil was relatively better compared to clove leaf oil, clove bud oil, and rosemary oils.  相似文献

为延长冷藏富硒虹鳟的货架期,实验以3种浓度的竹叶抗氧化物溶液(AOBS,质量浓度分别为0.5%、1.0%和1.5%)分别浸泡富硒虹鳟鱼块,再进行乳清分离蛋白溶液(WPIS)涂膜,(25±1)°C下鼓风吹干表面水后置于4°C冰箱贮藏1、4、7、10和13 d,测定鱼块的pH值、TVB-N值、K值、菌落总数和嗜冷菌数、结合水分含量和水分状态,分析涂膜对冷藏富硒虹鳟鱼块品质的影响。结果显示,随着冷藏时间的延长,鱼块的pH值、TVB-N值、K值、菌落总数和嗜冷菌数显著增加,水分含量显著降低,结合水和不易流动水向自由水迁移。其中,1.0%AOBS+WPIS组的pH值、TVB-N值、K值、菌落总数和嗜冷菌数的增加速率和水分含量的减少速率最慢,结合水与不易流动水的比例最高。1.0%竹叶抗氧化物浸泡结合乳清分离蛋白涂膜,提升了乳清分离蛋白涂膜的保鲜效果,可有效抑制富硒虹鳟冷藏过程中品质的劣变,延长货架期。根据TVB-N值、K值和菌落总数,1.0%AOBS+WPIS组可延长富硒虹鳟货架期3 d。本研究可以为富硒虹鳟的低温贮藏技术提供科学指导。  相似文献

Research was conducted to determine the effects of potassium sorbate applications (0, 1, 3, and 5% w/v) on the shelf life of pearl mullet (?nci Kefali; Chalcalburnus tarichi) fillets packaged with vacuum. Fillets kept at 4 ± 1°C were subjected to microbiological (total aerobic mesophilic bacteria, psychrotrophic bacteria, lactic acid bacteria, Enterobacteriaceae, molds, and yeasts) and chemical (pH, thiobarbituric acid—TBA, total volatile base nitrogen—TVB-N, water activity, and biogenic amines) analyses on certain days (0, 3, 6, 9, and 12 days) of storage. It was determined that potassium sorbate had effects on total aerobic mesophilic bacteria, psychrotrophic bacteria, Enterobacteriaceae, mold-yeast counts, TVB-N values, phenylethylamine, putrescine, tryptamine, and pH of fillets at a significant (p < 0.01) degree. Retarded bacterial growth was observed as the antimicrobial effect increased with the degree of its concentrations. Storage time had significant (p < 0.01) effects on bacteria count, TBA, TVB-N values, and biogenic amines; all of which were increased by longer storage. It was concluded that application of potassium sorbate, especially at a 5% level, and vacuum packaging helps cold stored fillets maintain their biogenic amines and microbiological and chemical qualities longer.  相似文献

ABSTRACT

In order to evaluate the effect of chilled (T1), frozen (T2), and freeze-chilled (T3) treatment on the flavor of grass carp fillets and soups, adenosine triphosphate (ATP)-related compounds, umami-taste amino acids (UTAA), thiobarbituric acid (TBA), peroxide value (PV), and soup sensory score were analyzed. Results showed that the sum of ATP, ADP, and AMP contents in T2 fillets were significantly higher (p < 0.05) than others, but the sum of hypoxanthine riboside (HxR) and hypoxanthine (Hx) contents for T2 fillets and soups were significantly lower (p < 0.05) than others during storage. The T3 fillets and soups had lower inosine 5-monophosphate (IMP) contents than T1 after Day 2, but higher UTAA contents than T1 during storage. The T3 fillets had the highest TBA and PV values among the three groups during storage. According to the total aerobic counts, K value, and sensory score, all the fillets and soups kept good quality during storage. Therefore, freeze-chilled treatment not only can extend fish shelf life but also retain excellent fish flavor.  相似文献
