ABSTRACT: To explore the potential utility of underutilized fish in the fish sauce industry, fish sauces were prepared from both raw and heat-induced meat of Japanese anchovy Engraulis japonica and rabbit fish Siganus fuscescens using wheat malt, and their quality aspects and sensory properties were assessed. Proximate composition of the fish meat represents protein as the major component (16.0–17.8%), other than moisture. Analyses of free amino acids, peptides including oligopeptides, and organic acids contents in fish sauces revealed suitability of both raw and heat-induced meat of the selected species in commercial fish sauce production. The variations in taste of raw meat fish sauces were species-specific, but the taste of fish sauces from heat-induced meat were similar. 相似文献

ABSTRACT: A pleuronectiform fish, the barfin flounder Verasper moseri , expresses three gonadotropin-releasing hormone (GnRH) forms in the brain: salmon GnRH (sGnRH), chicken GnRH-II (cGnRH-II) and seabream GnRH (sbGnRH). To clarify the effects of photoperiod on GnRH systems, changes in brain and pituitary GnRH peptide levels were examined using time-resolved fluoroimmunoassays. In experiment 1, 5-month-old male barfin flounder (mean total length 9.0 cm, body weight 11.0 g) were divided into short (8:16 h light : dark [L:D] cycle; lights on 08.00–16.00 hours) and long photoperiod (16:8 h L:D cycle; lights on 04.00–20.00 hours) groups in mid September and maintained until November under natural water temperature (19.3–15.2°C). Brain sGnRH concentrations were significantly higher in the 16:8 h L:D group than in the 8:16 h L:D group, whereas no significant differences were observed in total length, body weight, plasma testosterone concentration, brain cGnRH-II concentration and pituitary sbGnRH content. In experiment 2, 7-month-old male barfin flounder (mean total length 16.5 cm, body weight 76.8 g) were divided into short and long photoperiod groups in mid December and maintained until February under natural water temperature (12.5–6.6°C). Total length, body weight and condition factor were significantly greater in the 16:8 h L:D group than in the 8:16 h L:D group, whereas no significant differences were observed in plasma testosterone concentration and GnRH levels in the brain and pituitary. ABSTRACT: The attacking potential of the scavenging amphipod Scopelocheirus onagawae on artificially injured hatchery-raised Japanese flounder Paralichthys olivaceus juveniles was investigated in relation to the degree of injury on the fish. All injured flounder juveniles were attacked by amphipods regardless of the degree of injury, while non-injured juveniles were not attacked. The attack by amphipods on the juveniles generally depended on the amount of glycine, a main feeding stimulant for the amphipod, released from the injury opening. The swimming ability of flounder juveniles was important to avoid the attack of amphipods. Furthermore, an area of injury allowing the amphipods to cling to the fish affects to the vulnerability of juveniles against the predation of amphipods. This study suggests that scavenging amphipods are potentially involved in the rapid reduction of the number of hatchery-raised juveniles. 相似文献

ABSTRACT: The present study reports the annual variation in consumption of the sea urchin Strongylocentrotus intermedius by avian predators on a rocky shore where the culture of sea urchins has been conducted. Carrion crow and a few gull species were the most abundant avian predators and consumed a large number of sea urchins. Crows consumed mostly natural sea urchins, approximately 36 kg ww/ha per year on the intertidal rocky bench, but the gull species consumed mostly cultured sea urchins, approximately 100 kg ww/ha per year in the culture area. The seasonal variation in the amount of sea urchins consumed by crows was higher than that by the gull species, presumably because of the difference in foraging behavior in association with the seasonal tidal cycle. The natural sea urchins consumed are an allochthonous input from the subtidal to the intertidal habitat, and thus, crow predation may not affect the natural and the cultured populations of the sea urchin. The gull species consumed much of the cultured sea urchin, and thus, may be regarded as an effective predator causing damage to sea urchin culture. The results suggest that further studies are needed to determine why the gull species selectively feed on cultured sea urchins. 相似文献
