Atlantic salmon, Salmo salar , were fed four levels of dietary fat (256, 308, 346 and 389 g kg−1 of diet) for 138 days, with the purpose of studying quality characteristics in raw and smoked fish fillets. Dietary fat levels up to 346 g kg−1 resulted in increased fat content of the raw fillets. The dietary fat levels had a less systematic effect on perceived fatness of the smoked fillets and caused a trend towards better odour and flavour. The fat content of raw fillets was significantly ( P ≤ 0.05) correlated to lower smoke odour, greater rancid flavour, fatness, and a yellower hue of the smoked fillets. Astaxanthin levels of the raw fillets varied between 6 and 11 mg kg−1 of fillet and were significantly ( P ≤ 0.05) correlated with greater intensity of smoke odour, lower off-odour, and less whiteness, greater colour intensity and a redder hue of the smoked fish. It is proposed that salmon fillets can be graded according to weight, fat content and colour values prior to smoking to obtain more standardized quality characteristics of the final product after processing.  相似文献

Four extruded diets differing in protein/fat concentrations, 378/389 g kg?1, 425/346 g kg?1, 480/308 g kg?1 and 524/256 g kg?1 were tested in a digestibility trial and a growth study. Apparent digestibility of protein and fat were not significantly different among the diets when tested in 1-kg Atlantic salmon, Salmo salar L., in sea water. The diets represented a range of digestible protein to digestible energy ratios (DP/DE ratios) of 14.1, 16.4, 18.8 and 21.9 g MJ?1. The 138-day growth study was performed with triplicate groups of Atlantic salmon of 1.0 and 2.5 kg initial weight. Irrespective of size; growth, feed conversion ratio (FCR), nitrogen and energy retention were poorer in fish fed the diet with DP/DE ratio of 14.1 g MJ?1 compared with the fish fed the other diets. A DP/DE ratio of 16.4 g MJ?1 was sufficient to produce maximum growth for the large fish, while the DP/DE ratio of 18.8 g MJ?1 produced the highest growth in the small fish. In the large fish, the lowest FCR was obtained on a DP/DE ratio of 16.4 g MJ?1, while there was no clear difference in FCR within the small fish when diets of DP/DE ratios of 16.4–21.9 g MJ?1 were fed. The carcass-to-body ratio in the small fish decreased with decreasing DP/DE ratios. The fish fed the diet of 21.9 g MJ?1 had significantly lower fat and dry matter and higher protein content than fish of similar size fed the other diets. Increased dietary lipid content seemed to improve astaxanthin deposition in the small fish, while the large fish showed no significant differences in astaxanthin deposition due to dietary treatment. This study indicates that a DP/DE ratio of 14.1 g MJ?1 in high-energy diets for Atlantic salmon in sea water is below the optimal DP/DE ratio for growth and feed utilization, and that the optimal DP/DE ratio decreases with increasing fish weight. DP/DE ratios around 19 g MJ?1 for fish weighing 1 to 2.5 kg, and 16–17 g MJ?1 for fish weighing 2.5 to 5 kg, are suggested to be optimal.  相似文献

Farmed Atlantic salmon (Salmo salar L) were fed to satiation or starved for 35 d, and subjected to acute pre-slaughter stress or careful handling before slaughtering. Rigor development, post-mortem energy metabolism and quality variations were analysed during 72 h cold storage. The body weight averaged 2.9 and 3.5 kg of the fed and starved salmon, respectively. The starved salmon had lower condition factor (0.99 vs. 1.11) and higher slaughter yield (92.6 vs. 87.5%), but the fat content was similar (11.8–12.9%) in the fed and starved salmon. The initial glycogen level was lower in the starved salmon (21 vs. 29 μmol g− 1), whereas initial ATP levels (6.4–6.6 μmol g− 1) were not affected by starvation. Pre-slaughter stress accelerated rigor development, stimulated lactate formation through post-mortem glycolysis, and increased the breakdown of ATP and CP. The effect of stress on rigor development was less pronounced in starved salmon, and a significant interaction was observed between nutritional status and stress. Rigor development was closely correlated to ATP breakdown, especially in fillets. Acute stress accelerated flesh softening during ice storage. After 72 h storage, the fillets of the starved salmon exposed to careful slaughter handling had the significantly firmest texture, whereas the most intense fillet colour was observed in the starved/stressed salmon. Liquid leakage from the muscle during cold storage was lower in the starved salmon, but pre-slaughter stress had no significant impact. It is concluded that a starvation period of five weeks can improve the resistant to acute stress prior to slaughtering of Atlantic salmon that in turn hampers rigor development.  相似文献

Atlantic salmon fry (4 g) were fed for 4 months on semi-synthetic diets containing fatty acid methyl esters of either 18:2 n-6, 18:3 n-3 or a mixture of equal amounts of 20:5 n-3 and 22:6 n-3. The different amounts of polyunsaturated fatty acids added were 0, 0.1, 0.2, 0.5, 1 and 2% (by dry weight). Increasing levels of dietary n-3 fatty acids up to 1% gave faster growth rates in salmon fry, and fish fed the mixture of 20:5 n-3 and 22:6 n-3 seemed to grow faster than fish fed only 18:3 n-3. No significant effect on growth rate was seen when the dietary level of 18:2 n-6 was increased. Dietary inclusions of n-3 fatty acids reduced the mortality of salmon, while dietary 18:2 n-6 had no such beneficial effects.
The dietary treatments caused substantial changes in the fatty acid composition of blood and liver phospholipids (PL), whereas the total lipid fraction of the carcass was less affected. Increasing doses of 18:2 n-6 in the diet resulted in an increased percentage of 20:4 n-6 in liver and blood PLs, while the percentage of 20:3 n-9 decreased. The percentage of 18:2 n-6 also increased in liver, blood and carcass. Dietary 18:3 n-3 resulted in increased percentages of 18:3 n-3 and 20:5 n-3 in liver PLs, while the percentage of 20:3 n-9 decreased. There was, however, no significant increase in the percentage of 22:6 n-3. Dietary 18:3 n-3 produced no significant changes in the composition of blood fatty acids, but increased the percentage of 18:3 n-3 in the carcass. The dietary combination of the n-3 fatty acids 20:5 and 22:6 resulted in an increased percentage of 22:6 n-3 in blood and liver lipids and a decreased percentage of 20:3 n-9, but there were no changes in the percentage of 20:5 n-3.  相似文献

Four diets formulated for salmon were fed to 0.11 kg white sturgeon, Acipenser transmontanus Richardson, for 8 weeks. Dietary compositions ranged from 258 to 402 g lipid kg−1, 535–378 g protein kg−1 and 22.7–14.4 g protein MJ−1 gross energy.
Fish in all treatments grew rapidly, utilized the diets efficiently and had body compositions similar to what has been found in previous studies, but there were some dietary effects. Sturgeon fed the diet with the highest lipid content and lowest protein/energy ratio had lower ( P < 0.05) specific growth rate, feed efficiency, and liver moisture and protein contents, and 6-phosphogluconate dehydrogenase activity, but higher liver lipid contents than fish fed the other three diets. Condition factor, organ to body weight ratios, whole-body and plasma concentrations of protein, glucose and triglyceride, and liver glucose-6-phosphate dehydrogenase, isocitrate dehydrogenase and malic enzyme activities did not differ significantly among dietary treatments. This suggests that white sturgeon subyearlings can utilize diets with high lipid contents (258–357 g kg−1) to display good growth without major adverse effects on body composition and liver lipogenic enzyme activities.  相似文献

Atlantic salmon (Salmo salar) were fed diets containing fish oil supplemented with 22:6n-3 (FO diet) or linseed oil supplemented with 20:5n-3 (LO diet) for 6 months. The effects of these diets, both containing about 36% n-3 fatty acids, on the esterification, desaturation and elongation of [1-14C] 18:2n-6 and [1-14C] 18:3n-3 were investigated in isolated hepatocytes. The percentages of radioactivity which was esterified from [1-14C] 18:2n-6 or [1-14C]18:3n-3 into total lipids, were approximately 20% lower in hepatocytes from fish fed the FO diet than in hepatocytes from fish fed the LO diet. The percentages of radioactivity esterified in both groups were further reduced when 0.1 mM unlabelled 22:6n-3 was added to the incubation. The percentage of desaturation and elongation products formed from [1-14C] 18:2n-6 was twice as high in hepatocytes from salmon fed the FO diet as it was in hepatocytes from fish fed the LO diet. The ratio of 18:2n-6 to 18:3n-3 was five times higher in the FO diet, and this probably promoted the conversion of 18:2n-6 to longer chain n-6 fatty acids. When 0.1mM unlabelled 22:6n-3 was added to the incubation medium, the percentages of desaturation and elongation products formed were unchanged. Thus, a high level of 22:6n-3 in the diet is apparently not inhibiting the conversion of 18:2n-6 to 20:4n-6, as long as the amount of 18:2n-6 present is substantially higher than that of 18:3n-3. No desaturation and elongation products were recovered from the phospholipids of hepatocytes incubated with [1-14C] 18:3n-3 in any of the groups. However, the `dead end' elongation product 20:3n-3 was found in the triacylglycerol fraction, and the percentage of this fatty acid increased when 22:6n-3 was added to the incubation medium.  相似文献

Atlantic salmon fry (4 g) were fed a semi-synthetic diet devoid of n-3 and n-6 polyunsaturated fatty acids (PUFA) for 4 months. External signs of nutritional imbalance during the period were slow growth rate and increased mortality. Some symptoms of essential fatty acid deficiency appeared in the fatty acid composition of the blood and liver during the fourth month. At that time, the percentages of n-3 and n-6 PUFA of triacylglycerols (TAG) were nearly exhausted, and the percentages of 22:6 n-3 and of 20:5 n-3 in phospholipids (PL) showed a marked decrease. This decrease in the PUFA level of the PL was paralleled by the appearance of 20:3 n-9, whereas in the TAG an increase in the percentage of 18:1 n-9 was observed. After 4 months the monounsaturated fatty acid 18:1 n-9 constituted nearly 50% of the fatty acids in the TAG fraction of the liver. The time course of the changes in fatty acid composition of liver and blood lipids was quite similar, whereas the carcass lipid composition appeared to respond slowly to a diet devoid of essential fatty acids.  相似文献

Nutrient discharges from fish farms can be determined retrospectively, simply and with a high degree of accuracy from records of fish production and feed conversion ratios (FCR), combined with chemical analyses of feed and fish. Prospective prediction of the inputs (via feed and outputs) via production and discharges) of given chemical elements, on a daily basis and over longer periods of time, would represent a valuable management tool for farmers, and for regulatory and planning authorities. A dynamic model is presented for Atlantic salmon, Salmo salar L., which integrates biomass, growth rate. FCR. and nutrient retention and discharges in relation to feeding rate, diet composition and environmental factors. In view of the importance of feeding rate on growth, FCR and nutrient discharges, three simulation alternatives were modelled; namely, feeding 50%. 75 or 100% of the estimated maximum daily ration of a specified diet to salmon smolts of 80 g initial weight over a period of one year in sea water. The 50 and 75% rations, in comparison with 100% ration, showed dramatic reductions in fish weight after one year (0.4 and 1.4 kg versus 3.3 kg). The discharges of nitrogen (N) and phosphorus (P) per unit biomass production were reduced to some extent in the first months of the simulation period, and thereafter, there were no clear differences in discharges of N and P per unit biomass at the three ration levels. However, the accumulated N and P discharges per unit weight gain were slightly increased on the 75% ration, and two-fold higher on the 50% ration compared to the 100% ration. The FCR was also higher in fish fed the lower rations. The simulation result indicates that reduced ration is not effective strategy for minimizing nutrient discharges from fish farms. In order to control discharges within any limits and to utilize the resources optimally, it is better to adjust the biomass on the farm and to feed the fish to appetite, at which growth rate is maximum and FCR is minimum.  相似文献

Heart and skeletal muscle inflammation (HSMI) caused by piscine orthoreovirus (PRV) and pancreas disease (PD) caused by salmonid alphavirus (SAV) are among the most prevalent viral diseases of Atlantic salmon farmed in Norway. There are limited data about the impact of disease in farmed salmon on wild salmon populations. Therefore, the prevalence of PRV and SAV in returning salmon caught in six sea sites was determined using real‐time RT‐PCR analyses. Of 419 salmon tested, 15.8% tested positive for PRV, while none were positive for SAV. However, scale reading revealed that 10% of the salmon had escaped from farms. The prevalence of PRV in wild salmon (8%) was significantly lower than in farm escapees (86%), and increased with fish length (proxy for age). Sequencing of the S1 gene of PRV from 39 infected fish revealed a mix of genotypes. The observed increase in PRV prevalence with fish age and the lack of phylogeographic structure of the virus could be explained by virus transmission in the feeding areas. Our results highlight the need for studies about the prevalence of PRV and other pathogens in Atlantic salmon in its oceanic phase.  相似文献
