The present study aimed to determine the ideal ratios of digestible essential amino acids (EAAs) for pacu (Piaractus mesopotamicus) juveniles by the amino acid (AA) deletion method. A completely randomized design which consisted of 11 treatments and three replicates each was used. The treatments included a control diet (CD) containing 55% of nonpurified natural ingredients and 45% of purified synthetic amino acids and ingredients, and other ten isonitrogenous and isoenergetic EAA limiting diets (LDs), each being deficient in 44.4 ± 0.02% of the respective EAA. Pacu juveniles with initial average body weight of 6.22 ± 0.09 g were distributed among 33 fiber glass tanks. Fish were fed with semipurified and extruded diets for 113 days two times a day until apparent satiation. The ideal ratio of each dietary EAA was calculated on the basis of the relationship between body N retention and amount of EAA deleted from the respective EAA LD. Based on the AA deletion method, the ideal ratios of digestible EAAs for pacu juveniles, relative to lysine requirement of 100% were estimated as: methionine 14.6%, threonine 35.0%, tryptophan 6.6%, arginine 62.8%, histidine 13.6%, isoleucine 26.3%, leucine 43.7%, phenylalanine 27.2%, and valine 35.8%.  相似文献

In order to determine the dietary isoleucine requirement of fingerling catla, Catla catla (4.25 ± 0.15 cm, 0.61 ± 0.04 g), six isonitrogenous (33.0 % crude protein) and isocaloric (13.7 kJ/g digestible energy) amino acid test diets containing casein, gelatin and l-crystalline amino acids with graded levels of isoleucine (0.5, 0.75, 1.0, 1.25, 1.5 and 1.75 % of the dry diet) were prepared. Triplicate groups of fish were randomly stocked in eighteen 70-l indoor polyvinyl circular troughs at a density of 25 fingerling per trough provided with a water flow-through system (1–1.5 l min?1). The experimental diets were fed to fish to apparent satiation at 08:00, 12:30 and 17:30 h for 12 weeks. Growth of the fish was found to increase with the incremental levels of dietary isoleucine up to 1.25 % of the dry diet. Quadratic regression analysis at 95 % maximum response of absolute weight gain (6.18 g fish?1), protein productive value (0.32), isoleucine retention efficiency (71.91 g fish?1), RNA/DNA ratio (4.81) and carcass protein (15.7 %) yielded the optimum isoleucine requirement in the range of 1.13–1.18 % of the dry diet, corresponding to 3.42–3.58 % of dietary protein. Data generated in this experiment would be useful to formulate isoleucine-balanced, cost-effective quality feeds for fingerling catla.  相似文献

This research was focused on the lipid fraction of an undervalued crustacean (lobster krill; Munida spp.) and the comparative study of individuals captured at winter and summer seasons. For this purpose, seasonal variations were analyzed in the muscle (i.e., tail meat) for proximate composition, lipid class distribution, and fatty acid (FA) profile. Mean total lipids ranged from 0.75 ± 0.08% (summer) to 0.92 ± 0.06% (winter), moisture from 77.94 ± 0.25% (winter) to 78.62 ± 0.38% (summer), and protein from 17.93 ± 0.46% (summer) to 18.22 ± 0.46% (winter). Regarding lipid class content (% of total lipids), phospholipids ranged from 64.85 ± 1.29 (summer) to 67.85 ± 2.56 (winter), sterols from 12.15 ± 0.35 (winter) to 13.54 ± 0.54 (summer), triacylglycerols from 0.04 ± 0.02 (summer) to 1.25 ± 0.88 (winter), and free FA from 1.14 ± 0.72 (winter) to 2.19 ± 0.34 (summer). In both seasons, the most abundant FA were C22:6ω3, C16:0, C18:1ω9, and C20:5ω3. Polyunsaturated fatty acids (PUFA) were found to be the most abundant group in samples from both seasons (50.4–55.3%). Higher PUFA values were determined in summer samples, while a highly valuable ω3/ω6 ratio (from 9.11 ± 1.12 in summer to 10.40 ± 1.39 in winter) was observed. It is concluded that in spite of being a low-fat product, the lipid fraction of this underutilized crustacean can provide highly valuable constituents.  相似文献

采用常规生化分析方法对中华沙鳅(Botia superciliaris Günther)肌肉成分进行了测定。结果表明:中华沙鳅含肉率为(74.89±1.59)%,肌肉(鲜样)中水分、粗蛋白、粗脂肪和粗灰分的质量分数分别为(76.65±1.37)%、(20.05±0.87)%、(1.56±0.12)%和(1.34±0.09)%。肌肉中含有18种氨基酸,肌肉(鲜样)中氨基酸、必需氨基酸(EAA)和鲜味氨基酸(DAA)含量分别为(19.42±0.07)%、(8.27±0.08)%和(7.13±0.06)%。肌肉中含有17种脂肪酸,肌肉(干样)中多不饱和脂肪酸(PUFA)含量为(1.96±0.06)%。  相似文献

ABSTRACT

The study aimed to improve the nutritional quality of wafers by utilizing fish powder developed from small bony fish at 10%, 20%, and 30% inclusion levels. Quality evaluation of produced wafers in terms of nutritional, physical, sensory, and shelf life characteristics was performed. Results revealed a significant increase (p < .05) in protein (8.07 ± 0.34 to 23.34 ± 0.43 g/100 g), fat (1.08 ± 0.85 to 4.69 ± 0.78 g/100 g), and ash content (3.67 ± 0.47 to 8.33 ± 0.30 g/100 g) of wafers with increased supplementation of fish powder. No significant change in diameter, thickness, or weight per wafer was observed; however, water absorption capacity (212.67 ± 2.52 to 71.67 ± 2.89 ml/100 g), fat absorption capacity (164.00 ± 3.60 to 66.00 ± 5.29 ml/100 g), and linear expansion (139.17 ± 6.16 to 76.40 ± 2.11%) reduced significantly (p < .05) on increasing level of fish powder in the produced wafers. Color analyses revealed a significant decrease in L* (89.57 ± 1.25 to 46.89 ± 1.06) and b* (7.25 ± 0.09 to 18.59 ± 0.8) value and significant increase in a* value (?0.54 ± 0.01 to 3.87 ± 0.03) with increasing fish powder supplementation. There was no significant (p > .05) alteration in sensory attributes of wafers with fish powder incorporation up to 20%. The produced wafers also had good storage stability, with peroxide value, free fatty acid, and total plate count within acceptable limits up to two months of storage.  相似文献

This study investigated the growth performance and nutritional composition of scale artificially cultured cuttlefish Sepia pharaonis. Juveniles were cultured in an open‐culturing cement pool system for 120 days. The body weight increased from 10.21 ± 1.44 g to 570.71 ± 126.32 g from 50 days old to 170 days old, and the average growth rate was 4.67%. The proximate, amino acid and fatty acid compositions of S. pharaonis muscles were analysed every 40 days to compare the quality. The cultured S. pharaonis were rich in essential amino acids (EAAs), functional amino acids (FAAs), docosahexaenoic acid (DHA) and polyunsaturated fatty acids (PUFAs), which accounted for 32%, 46%, 28% and 54% (dry weight) respectively. Total amino acids (TAAs) and EAAs exhibited a clear distinction between ages, and significant differences were observed among the levels of individual amino acids, including Pro, Ala, Asp and Lys, which were significantly higher at 130–170 days old than at 50 days old (< 0.05). Although the total saturated fatty acids, monounsaturated fatty acids and PUFAs were statistically similar between ages, C17:0, C22:6 n‐3 and PUFAs were higher at 130–170 days old than at 50 days old (< 0.05). The results indicate that large‐scale artificial culture of S. pharaonis can be achieved under the conditions of a cement pool. This study also provides new information regarding the growth performance and nutritional composition of cultured S. pharaonis, which will contribute to the development of aquaculture practices for this species.  相似文献

Eight tropical marine macro algae were investigated for in-vitro antioxidant, antibacterial, and biochemical properties. The moisture content [% DW (dry weight)] ranged from 7.21 to 14.72%; ash, 24.92 to 47.04%; lipids, 0.73 to 2.67%; protein, 4.56 to 12.59%; and carbohydrate, 30.1 to 48.51%. The % sum of polyunsaturated fatty acids (PUFAs) ranged from 21.71 to 78.22%, while omega-6/omega-3 (ω6/ω3) ratio was from 0 to 2.08, which remained within the prescribed World Health Organization (WHO) standards (<10). The % sum of essential amino acids (EAAs) ranged from 86.18 to 204.66, and Na/K ratio ranged from 0.37 to 2.85. The extracts exhibited significant (< 0.05) values for total phenol (7.25–16.0 µg PGE mg–1 DW) and total flavonoid (4.06–15.63 µg QE mg–1 DW) at 200 µg/ml. Antibacterial activity was tested against the selected food spoilage and pathogenic bacteria. The principal component analysis (PCA) confirmed a positive correlation between total phenolic content, 1, 1-diphenyl-2-picryl-hydrazyl (DPPH) radical-scavenging activities, and ferric reducing antioxidant power (FRAP), which supports the integration of seaweeds as ingredients in functional foods.  相似文献

The amino acid composition and protein levels of three species of cephalopods (Octopus vulgaris, Loligo gahi and Todarodes sagittatus), the natural diets of common octopus (O. vulgaris) and different kinds of meals were determined in order to optimise the content of these nutrients in artificial feeds. Arginine, leucine and lysine were the most abundant essential amino acids in cephalopods, while glutamate and aspartate represented the main non-essential amino acids. Arginine and leucine were the limiting amino acid in most samples, with maximum Chemical Score values for mussel (79–98 %), squid (84 %) and crustaceans (65–91 %); medium for fish (41–70 %); and minimum for meals (29–64 %). Mussel, squid, crustaceans and fish showed a high essential amino acid index according to Oser (OI: 88–99 %) suggesting a suitable amino acid balance. The protein from animal meals (fish and krill) covered all the essential amino acids except arginine and lysine in fish meal. The vegetable meal presented the worst amino acid balance (OI: 74–89 %) with several deficiencies in essential amino acids, including arginine, threonine, lysine and methionine. Supplementation with arginine or leucine and protein complementation of crustaceans and bivalves with fish or animal meal are proposed as alternatives for improving the performance of protein in feed for cephalopods.  相似文献

Antimicrobial nanoparticle therapy was proposed as an alternative strategy to reduce the use of antibiotics in larval-rearing systems. Antibacterial potential of the prepared squilla chitosan–silver nanoparticles and its protective effect on Dicentrarchus labrax (sea bass) larvae in the early stages were studied against Vibrio angularium. Different concentrations of squilla chitosan (Csq) and squilla chitosan–silver nanoparticles (Csq–AgNps) (1, 2, 5, 10, and 20 %) were, in vitro, tested against V.anguillarum and expressed as a role of Log10 mean. Sea bass larvae were treated using: 10 % Csq and 5 % Csq–AgNps as effective inhibitory concentrations against the pathogen either encapsulated during the feeding regime or added directly to the model system via the water from the onset of 4 weeks. The long-term administration of Csq–AgNps through enriched food for both non-infected and infected systems had survival % of 74.5 ± 1.5 and 72.5 ± 2.5, respectively. Larval clinical observations using Csq–AgNps were studied compared with the two controls. The current study found that 5 % encapsulated Csq–AgNps was enough to suppress infection and considered as an alternative to antibiotics in controlling virulent fish pathogens.  相似文献

The effect of varying oxygen saturation regimes on growth and haematological profiles of peled Coregonus peled was investigated on fish of initial age 90 days post hatching. Eighty‐five juveniles per group (initial body weight 3.09 ± 0.80 g) were submitted to a 63‐day experiment with one of four water saturation regimes: normoxia (NORm, 80%–90%), hypoxia (HYPo, 50%–60%), hyperoxia (HYPe, 150%–160%) and intermittent hyperoxia (iHYPe, 150%–160% ‐ 80%–90%). Survival rate in NORm, HYPe and iHYPe ranged from 96.3 ± 2.1% to 97.7 ± 2.7, but survival 87.5 ± 3.0 was significantly lower in the HYPo group. No differences were observed in feed conversion ratio. The highest final body weight of 18.2 ± 4.6 g and a specific growth rate of 2.81 ± 0.01%/day were seen in the NORm group. Significant differences were found in haemoglobin concentration with increased saturation. The fish had lower haemoglobin 55.00 ± 5.72 and 51.35 ± 10.89 g/L in treatments HYPe, iHYPe with compared to the normoxia (64.22 ± 5.78 g/L). Haematocrit was similar in the groups HYPo, NORm and iHYPe (0.55 ± 0.04, 0.58 ± 0.05 and 0.54 ± 0.09) with the exception of HYPe, which was significantly lower (0.48 ± 0.06). Significantly lower count of erythrocyte was observed in iHYPe group (0.88 ± 0.20) with compared to the normoxia (1.06 ± 0.13). The supersaturation level was not associated with effects on growth and survival, and adding oxygen is not recommended for intensive rearing of peled. The results showed normoxia oxygen level to be the most suitable conditions for peled.  相似文献

Atlantic stingrays, Dasyatis sabina, are common residents of shallow-water seagrass habitats that experience natural cycles of severe hypoxia during summer months. We hypothesized that stingrays exposed to hypoxic episodes would improve their hypoxia tolerance by increasing branchial surface area and altering blood oxygen-carrying capacity. To this end, we compared critical oxygen minimum, gill morphology, and hemoglobin/hematocrit levels in a control group of Atlantic stingrays held at continuous oxygen saturations of 80–90 % (≥5.5 mg/l), to treatment groups exposed to a 7-h hypoxic interval at 55 % (~4.0 mg/l), or 30 % oxygen saturation (~2.0 mg/l). Stingrays in hypoxic treatment groups significantly improved their hypoxia tolerance. Critical oxygen minimum values fell from 0.7 ± 0.11 mg/l in control fish to 0.4 ± 0.05 and 0.4 ± 0.06 mg/l in the 55 and 30 % saturation treatment groups, respectively. Mass-specific gill surface area between control fish and the 30 % saturation treatment group increased by 1.7-fold, from 85 to 142 mm2/g. Although stingrays did not show an increase in hematocrit or hemoglobin levels, production of more efficient hemoglobin isoforms could not be ruled out. An increase in hypoxia tolerance allows Atlantic stingrays to forage for longer times and across a wide range of hypoxic habitats that are less accessible to predators and competitors.  相似文献

为了研究不同生长时期红螯螯虾(Cherax quadricarinatus)肌肉和肝胰腺内脂肪酸和氨基酸的动态变化,选取90 d (第二性征未发育)、140 d (第二性征发育成熟)和180 d (性腺发育成熟)的红螯螯虾,分别测定其肌肉和肝胰腺内氨基酸和脂肪酸的含量。结果显示,90 d红螯螯虾肌肉中的必需氨基酸总量显著高于其他2个时期(P<0.05);而红螯螯虾肝胰腺内必需氨基酸总量和非必需氨基酸总量均随着日龄增加而逐渐下降。比较不同生长时期肌肉中脂肪酸含量发现,随着日龄增长,饱和脂肪酸(SFA)含量呈下降趋势;而单不饱和脂肪酸(MUFA)含量呈先上升后下降的变化趋势,140 d含量最高[(25.69±0.42)%];多不饱和脂肪酸(PUFA)含量呈上升的变化趋势。肝胰腺中SFA含量在 3个生长时期内无显著性差异(P>0.05),MUFA含量呈先上升后下降的变化趋势,140 d含量最高[(37.44±0.59)%],而PUFA含量变化与MUFA正好相反。营养价值评估结果显示,180 d (可上市销售)的红螯螯虾肌肉内必需氨基酸指数(49.96%)高于联合国粮农组织/世界卫生组织(FAO/WHO)评分模式(31.50%)和全鸡蛋蛋白质模式(43.10%),是较为理想的优质食物蛋白源。由上可知,在不同生长时期,肌肉和肝胰腺中的氨基酸、脂肪酸的主要消耗不同,研究结果对了解不同生长时期红螯螯虾营养需求、开发红螯螯虾配合饲料提供了参考依据。  相似文献

To determine the effects of feed processing method (extrusion or expansion followed by compression pelleting) on feed physicochemical characteristics, fecal stability, water quality, and growth performance in rainbow trout, three types of feed pellets (expanded sinking [EpS], extruded sinking [ExS], extruded floating [ExF]) were prepared, analyzed, and fed to juvenile rainbow trout (initial weight = 285.8 ± 15.2 g) at three feeding rates based on feeding rate curves developed at Snake River Farm (Buhl, Idaho, USA) (median rates [%BW] for feeding rate 1: 0.85; feeding rate 2: 0.95; feeding rate 3: 1.05) for 124 days. Results showed that all feeds had similar chemical composition, but the degree of starch gelatinization (as % of starch) was significantly higher in ExS (90.01 ± 0.26) and ExF (84.82 ± 0.63) than in the EpS (9.09 ± 0.41) feed, which led to extruded feeds having much higher water stability, fecal durability, and lower phosphorus discharge. The ExF feed produced better growth (% increase; 154.4 ± 18.5) and feed conversion (1.06 ± 0.06) compared to EpS (126.3 ± 12.4 and 1.26 ± 0.14) and ExS (121.7 ± 7.8 and 1.22 ± 0.04) in rainbow trout. Growth (% increase) improved as feeding rate increased (feeding rate 1: 125.6 ± 10.3; feeding rate 2: 140.8 ± 16.0), but further improvements were not observed at the highest feeding rate (feeding rate 3: 135.9 ± 22.8). The present study is the first to show that the extrusion process not only produces pellets having better quality than the expansion-compressed pelleting method but also improves fecal size and durability in water, and therefore, use of extruded feeds has the potential to improve waste collection and removal and reduce contribution to pollution in effluent.  相似文献

An outdoor growth trial was conducted for 75 days to investigate the effect of C:N ratio and bamboo substrate (S) in brackish water shrimp culture. Penaeus monodon juveniles (0.35 ± 0.03 g) were stocked in experimental tanks with and without bamboo substrate. C:N ratio of 10 and 20 was manipulated with shrimp feed containing 32 % crude protein and rice flour as carbohydrate source. Addition of substrate and higher C:N ratio (CN20+S) significantly reduced (p < 0.01) inorganic nitrogen NH3–N by 48.2 %, NO3–N by 41.6 %, NO2–N by 42.7 % compared with CN10. Substrate addition significantly (p < 0.05) reduced the turbidity by 22.4 % (CN10+S against CN10) and 20.7 % (CN20+S against CN20). Periphyton biomass and total heterotrophic bacterial load were significantly higher (p < 0.05) in CN20+S in comparison with CN10+S treatment. The autotrophic index increased from 123.4 ± 0.62 to 158.9 ± 3.8 for CN10+S and, 121.8 ± 1.6 to 228 ± 9.11 for CN20+S system. Provision of substrate and carbohydrate addition resulted in the highest body weight, 4.87 ± 0.12 g in CN20+S against 3.66 ± 0.07 g in CN20 and 2.90 ± 0.12 g in CN10 through provision of natural food in the form of periphytic algae and heterotrophic bacterial community. Treatment with substrates showed a higher survival rate by 7 % in comparison with without substrate treatments as it acted as shelter to shrimp during molting and there by reduced cannibalism. Thus, our results demonstrated that high C:N ratio and substrate addition improved growth, reduced FCR and better water quality conditions.  相似文献

对软烤扇贝制品在常温贮藏期间的感官、化学和微生物品质进行分析。结果表明,样品感官品质良好,水分含量40.65±2.38%,Aw0.92±0.02,符合产品标准要求;但细菌菌落总数和耐热菌落总数分别为4.16±1.54 log10cfu/g和3.98±1.02 log10cfu/g,pH6.77±0.14,不符合产品标准要求。对潜在病原菌金黄色葡萄球菌、蜡样芽孢杆菌进行测试鉴定。结果表明,样品中检出5组菌,2组为葡萄球菌属,但不是金黄色葡萄球菌;3组为芽孢杆菌属。探究其是否具有致病性,需要增加样本并与产品加工过程关联,作进一步研究分析。  相似文献

An experiment to investigate the compensatory growth (CG) response of Labeo rohita was conducted in two phases: a first phase (6 weeks) in which triplicate groups of fish were subjected to feed restriction (5, 25, 50 and 75 % of satiation) or satiation feeding (control) and a second phase (6 weeks) of satiation feeding for all treatment groups. CG in body weight occurred in groups which were under moderate feed restriction (50–75 % of satiation) under phase 1, but more severe feed restrictions resulted in lower weight gain. Improved feed conversion ratio (FCR) (1.6 ± 0.05 and 1.9 ± 0.03) relative to control (2.1 ± 0.06) was observed in the fish that displayed CG following moderate feed restriction (50–75 % of satiation). At the end of the experiment, body moisture, lipid and protein content were not significantly different between moderately restricted fish and the control. After the first phase, there was no significant difference in the expression of pituitary growth hormone (GH) gene between groups, but at the end of the experiment, significantly lower GH expression was observed in the fish subjected to a restriction of 25 and 50 % of satiation during phase 1. Exploiting the ability of fishes to undergo CG in terms of weight gain and improved FCR without major changes in body composition can be considered as an effective management practice.  相似文献

Sutchi catfish (Pangasianodon hypophthalmus) is a highly preferred farmed species that is produced in huge quantities. Meat from ice-stored (4 ± 2°C) whole Sutchi catfish was evaluated for formation of biogenic amines, such as putrescine, cadaverine, histamine (HIM), agmatine, tyramine, spermine, and spermidine, and compared with biochemical, microbial, and sensory attributes during 22 days. Analysis of content of biogenic amines in the meat was carried out by liquid chromatography with tandem mass spectrometry using a without derivatization method. Three amines, namely, tyramine, spermidine, and spermine, were only present on 0th day of storage. Presence of cadaverine was noticed from 9th day onwards, where the aerobic plate count (APC) reached 4.85 log CFU/g. Putrescine was detected on the 22nd day of storage, where the APC crossed 7 log CFU/g. HIM was detected in lower quantities from 3rd day onwards. A shelf life of 15 days was determined based on sensory and microbiological evaluation. Although the samples were biochemically acceptable throughout the storage period, APC exceeded the limit on day 19, and the gradual increase of H2S-producing bacteria, Brochothrix thermosphacta, Aeromonas, and Enterobacteriaceae, was observed during storage.  相似文献

The present study was based on a 2 × 4 factorial design with two levels of dietary protein (33% or 37% CP) and four phytase levels (0.0, 750, 1,000, and 1,250 FTU/kg diet). African catfish, Clarias gariepinus (B.) (10.7 ± 0.4 g), were distributed into earthen ponds (100 m2 surface area per each) at a density of 4.5 fish per m2. Fish were fed on the experimental diets up to satiation twice a day for 3 months. Another experiment with the same treatments was conducted in 45-L tanks for 2 months to evaluate nutrient retention and digestibility. The growth and production of African catfish fed phytase-enriched diets were higher than those fed the control diet. The highest fish performance and production was observed with fish fed 37% CP enriched with a 1,200 FTU/kg diet of phytase. Feed intake was significantly affected by supplemental phytase alone, where it increased significantly as dietary phytase increased at both protein levels, resulting in similar FCR values (1.31–1.46). Additionally, the maximum values of protein efficiency ratio, protein retention, and phosphorus retention were obtained at 33% CP with phytase levels of 750–1,000 FTU/kg diet. It is also noticed that organic matter, protein, and phosphorus were more digestible in fish fed a 37% CP diet with high phytase levels. These results suggest that the optimum performance and production of African catfish were observed at a 37.0% CP diet enriched with a phytase level of 1,200 FTU/kg diet.  相似文献

A few chemical characteristics of Gulbi, a traditional Korean seafood prepared from salted and dried Yellow corvenia (Pseudosciaena manchurica), were investigated during drying at different temperatures. When Gulbi was manufactured by sun-drying (the control), it had the highest thiobarbituric acid reactive substances (TBARS) and volatile basic nitrogen (VBN) values. They increased with increasing drying time at all temperatures in the hot-air drier. The TBARS value of Gulbi was lower when dried at 30 and 35°C than at 40°C and the control. The VBN of the control was higher than that of hot-air dried Gulbi at 30 and 35°C and lower than that of hot-air dried Gulbi at 40°C. The control had a VBN value of 20.8 ± 0.07% and the hot-air dried at 30°C, 18.0 ± 0.06; at 35°C, 18.6 ± 0.06; at 40°C, 23.8 ± 0.08 (p < 0.05), respectively. The salt content of the control and Gulbi dried at 30, 35, and 40°C were 22.9 ± 0.07%, 17.7 ± 0.06%, 18.0 ± 0.06%, and 24.3 ± 0.08%, respectively. The amino nitrogen content was much lower: 63.1 ± 0.80 mg/100 g and 65.5 ± 0.14 mg/100 g at 30 and 35°C than 78.3 ± 0.21 mg/100 g at 40°C. The results of this study also indicate that the Gulbi dried at 30 and 35°C had better chemical characteristics than those dried at 40°C when using hot-air drying and sun drying.  相似文献

The aim of this study was to determine the growth performance, meat quality and colour attributes of large rainbow trout (Oncorhynchus mykiss) in net cage systems in the southern Black Sea coasts of Turkey. In the study, large rainbow trout with an initial weight of 1,322.07 ± 57.72 g were reached to 3,385.30 ± 140.98 g and the survival rates were 95.69 ± 1.32% in 5‐month production period. Crude protein and crude fat values of fish meat were ranged between 16.75 ± 0.07–20.18 ± 0.90% and 9.22 ± 0.15–12.29 ± 0.42%, respectively (p < .05). The essential and non‐essential amino acid values were between 12.92 ± 0.02–13.09 ± 0.01 g/100 g and 11.97 ± 0.14–11.47 ± 0.01 g/100 g, respectively (p > .05). C20:5n‐3, C22:6n‐3, ?3 and ?6 values in fish meat were between 4.32 ± 0.02–4.30 ± 0.08% (p < .05), 8.31 ± 0.10–7.72 ± 0.15% (p < .05), 13.41 ± 0.10–12.93 ± 0.23% (p < .05) and 21.85 ± 0.06%‐19.74 ± 0.36 (p < .05), respectively. As a result, it can be concluded that large rainbow trout cultured in the southern Black Sea coasts of Turkey is a rich source of food in terms of fatty and amino acid compositions and atherogenicity index, thrombogenicity index and hypocholesterolaemic/hypercholesterolaemic values.  相似文献
