不同部位高原牦牛肉品质评价   总被引:2,自引:1,他引:1  
为了研究高原牦牛不同部位肉的品质特性,本研究采集了10头牦牛的冈上肌(SU)、腰大肌(PM)、背阔肌(LA)、背最长肌(LD)、臂股二头肌(BF)、半腱肌(ST)、半膜肌(SM)、臂股四头肌(QF)8个部位分割肉,并测定了其蒸煮损失、滴水损失、剪切力、pH、L*值、a*值、b*值7项品质指标。结果发现,不同部位牦牛肉之间,除了a*值以外,其余6项品质指标均存在显著差异(P0.05)。腰大肌、背阔肌、半腱肌相对于其他部位嫩度显著较好(P0.05),其剪切力均未超过6kg,而背阔肌、半腱肌、半膜肌3个部位的持水能力却最差,其中半腱肌具备了最高的亮度和黄色度(L*值和a*值)。通过标准化分析可以发现,背最长肌和半腱肌之间具有相似的品质特征;而臂股二头肌、半膜肌和臂股四头肌之间具有相似品质特征。相关性分析发现,pH与蒸煮损失之间存在显著的负相关性,表明不同部位牦牛肉的持水能力差异可能与其酸化程度有关。结果表明,部位因素对牦牛肉品质有显著影响,其中持水能力差异可归因于酸化程度不同。  相似文献

试验分别取10月龄新疆褐牛、荷斯坦牛、安格斯牛和西门塔尔牛公犊的左半侧胴体背最长肌、半腱肌和臀中肌,进行肉品质分析。结果表明,不同品种牛肉肌红蛋白的含量不同,其含量顺序依次是荷斯坦牛>新疆褐牛>西门塔尔牛>安格斯牛,差异不显著(P>0.05);4个品种间安格斯牛的脂肪含量最高而胶原蛋白含量最低,背最长肌中脂肪含量与其它品种相比差异显著(P<0.05);同品种不同部位的肌红蛋白、粗脂肪、粗蛋白质含量和失水率大小不同,差异不显著(P>0.05),但存在一定规律,肌红蛋白含量半腱肌和臀中肌含量大于背最长肌,差异显著(P<0.05);同品种不同部位间胶原蛋白含量背最长肌低于臀中肌和半腱肌,且差异显著(P<0.05)。  相似文献

试验研究了“平凉红牛”商品群体和秦川牛进行背最长肌、米龙肉样的常规肉品质性状(系水力、蒸煮损失、剪切力和pH值肉质指标)和营养成分(干物质、蛋白质、脂肪肉质指标)指标分析。结果表明,秦川牛胴体不同部位肉样品质均有较大差异且变化趋势相似,背最长肌的系水力、蒸煮损失、剪切力、干物质含量、脂肪含量均优于米龙,符合背最长肌作为高档肉切块的特点。  相似文献

[目的]为了研究阉割对早胜黄牛公牛肉质的影响,[方法]试验选择健康无病、发育正常、养殖环境一致的12月龄早胜黄牛公牛和阉牛(6月龄早期阉割处理)各3头,短期育肥3个月,屠宰后取背最长肌,对蒸煮损失、滴水损失、剪切力、pH值、肉色(L*、a*和b*)、系水力、粗蛋白、粗脂肪、水分、粗灰分及氨基酸组成和含量进行了研究。[结果]试验结果表明:阉割公牛背最长肌的pH、红度(a*)、黄度(b*)、系水力、粗脂肪、Glu、Leu含量显著高于公牛(P<0.05);而背最长肌蒸煮损失、滴水损失、剪切力、亮度(L*)、粗蛋白、水分显著低于公牛(P<0.05),在公牛和阉牛的氨基酸组成及含量中,多数氨基酸含量不存在显著差异,但阉牛氨基酸含量略高于公牛氨基酸含量。[结论]阉割处理可以显著提高12月龄早胜黄牛的嫩度和系水力,改善牛肉的色泽,增加牛肉干物质和氨基酸含量,说明阉割有助于提高早胜黄牛育肥公牛的肉品质。  相似文献

为了探究肌肉生长抑制素(myostatin,MSTN)基因在肌肉和脂肪中的DNA甲基化模式及mRNA表达水平,试验以5月龄巴什拜羊羔羊为研究对象,采用亚硫酸氢盐测序法(bisulfite sequencing PCR,BSP)检测MSTN基因启动子区和第1外显子甲基化模式,并通过实时荧光定量PCR检测MSTN基因在巴什拜羊股二头肌、股三头肌、半腱肌、半膜肌、背最长肌和尾脂中的mRNA表达水平。结果显示,肌肉组织甲基化概率高于脂肪组织,其中,股二头肌、股三头肌、半腱肌、半膜肌、背最长肌和尾脂的甲基化概率分别为74.2%、74.2%、83.2%、83.7%、82.1%和25.3%,MSTN基因在股二头肌、股三头肌、半腱肌、半膜肌、背最长肌中的表达水平显著低于尾脂(P < 0.05),股二头肌、股三头肌、半腱肌、半膜肌和背最长肌之间差异不显著(P > 0.05),巴什拜羊肌肉和脂肪MSTN基因DNA甲基化水平与MSTN基因表达量呈显著负相关(r=-0.886,P < 0.05)。  相似文献

为了探究贵州关岭黄牛不同部位肌肉的营养成分和氨基酸含量差异,试验选取20头24~28月龄贵州关岭黄牛为试验对象,屠宰后采集眼肌肉、上脑、牛腩、脊肋排、里脊、臀肉测定pH值、滴水损失率、剪切力、肉色[亮度(L*)值、红色(a*)值、黄色(b*)值]及水分、脂肪、蛋白质含量和氨基酸组成。结果表明:关岭黄牛肉样pH值均小于7,呈酸性;滴水损失率大小表现为臀肉>上脑>眼肌肉>牛腩>里脊>脊肋排;臀肉剪切力显著高于其他部位(P<0.05),上脑剪切力最低;牛腩的L*值、a*值和b*值最优;眼肌肉、上脑、臀肉中水分含量差异不显著(P>0.05),但显著高于牛腩、脊肋排和里脊(P<0.05);臀肉中蛋白质含量显著高于其他部位(P<0.05),脂肪含量显著低于其他部位(P<0.05);脊肋排中蛋白质含量相对较低、脂肪含量相对较高;各部位共检出16种氨基酸,其中必需氨基酸7种;谷氨酸含量最高,赖氨酸、天冬氨酸、精氨...  相似文献

为了研究育肥牛不同部位肌肉的肉质特性,以9头安格斯×秦川育肥牛为研究对象,测定了背最长肌、三角肌、臀股二头肌、股直肌、股外侧肌和股中间肌的pH值、压力失水率、色差[亮度值(L~*值)、红度值(a~*值)、黄度值(b~*值)、色饱和度(C~*)和色调角(h~*)]、剪切力、蛋白质、脂肪和水分等肉质指标,分析了各指标间的差异,并对生鲜牛肉和煎制牛排进行了感官评价。结果表明:股外侧肌的压力失水率显著高于三角肌和股中间肌(P0.05),臀股二头肌、股外侧肌和股直肌的蒸煮损失显著高于背最长肌和三角肌(P0.05),三角肌的L~*值显著高于背最长肌、股中间肌和股外侧肌(P0.05),三角肌的脂肪含量显著高于股外侧肌(P0.05),股中间肌的水分含量显著高于三角肌(P0.05);6个部位肌肉的美食感和总体可受性得分均大于5分,都能满足消费者对生鲜牛肉和煎制牛排的要求。  相似文献

为研究日粮硒水平对22~42日龄肉仔鸡生长性能和肉品质的影响,试验选用380只1日龄Arbor Acres(AA)肉公雏,1~21日龄统一饲喂同种正常添加无机硒的玉米-豆粕型日粮(含硒0.47 mg/kg),于22日龄从中选取体重接近的336只鸡,随机分成6个处理组,每组7个重复,每个重复8只鸡。分别饲喂不添加硒的玉米-豆粕型基础日粮(对照组,含硒0.015 mg/kg)和在基础日粮中分别添加0.10、0.20、0.30、0.40和0.50 mg/kg硒(以亚硒酸钠形式添加)的试验日粮,试验期21 d。结果表明,日粮中添加不同硒水平对22~42日龄肉仔鸡平均日增重、平均日采食量和料重比均无显著影响(P>0.05);对42日龄肉仔鸡屠宰率、全净膛率、胸肌率、腿肌率和腹脂率均无显著影响(P>0.05);日粮中添加不同硒水平对42日龄肉仔鸡腿肌剪切力和胸肌肉色L*值有显著影响(P<0.05),其中添加0.50 mg/kg硒处理组肉鸡的腿肌剪切力最低,添加0.20和0.50 mg/kg硒处理组肉鸡的胸肌肉色L*值最低,但其他肉质性状指标在各组间均无显著差异(P>0.05)。综上所述,玉米-豆粕型基础日粮中添加不同水平硒对22~42日龄肉仔鸡生长性能与42日龄肉仔鸡胴体性状均无显著影响,但日粮中添加0.50 mg/kg硒降低了腿肌剪切力和胸肌L*值,对肉品质有一定的改善作用。  相似文献

In order to define the quality characteristics of different anatomical locations of Yunling cattle,the pressing loss rate,cooking loss rate,shear force,pH, L* value,a* value,b* value,crude protein content,crude fat content and moisture of supraspinatus (SU),infraspinatus (IF),triceps brachii (TB),rhomboideus (RH),serratus ventraliscervicis (SVC),splenius (SP),psoas major (PM),longissimus dorsi (LD),latissimus dorsi (LA),semimembranosus (SM),semitendinosus (ST),biceps femoris (BF),gluteus medius (GM),rectusfemoris (RF),vastus lateralis (VL), tensor fasciae latae (TFL) from Yunling cattle carcass were determined.The quality traits of Yunling cattle meat among different anatomical locations were analyzed using variance,correlation and standardization analysis. The result showed that there were significant differences in quality traits among various anatomical locations (P<0.05). The SU,IF,PM,SVC and TFL had higher tenderness comparing to other muscles with shear force values less than 4 kg,while the water holding capacity of SP,ST and VL was poorer than other muscles. The ST had the highest L* value among all muscles. There was significantly positive correlation between shear force and pressing loss, cooking loss rate. The LD and ST had similar quality characteristic,while BF,GM and VL had similar quality characteristic. It was showed that different parts of muscle had significant effect on Yunling cattle meat quality.The quality of forequarter meat was better, which could be used to develop high-end products.  相似文献

研究旨在比较大额牛和婆罗门杂交后代(GBF1)与云岭牛肉品质,评估大额牛杂交利用潜能。选择年龄相近、性别相同的GBF1牛和云岭牛进行育肥、屠宰,采集100个肉样冻存。以肉质较好的云岭牛肉为对照,检测GBF1牛肉的剪切力、失水率、系水力、蒸煮损失。结果表明,GBF1牛肩峰剪切力显著高于云岭牛(P< 0.05),其他部位肉剪切力两品种间没有显著差异(P> 0.05)。GBF1牛10个部位肉的平均剪切力、失水率、蒸煮损失分别为3.50 kg、24.15%、27.56%,低于云岭牛;平均系水力64.60%,高于云岭牛,但差异均不显著(P> 0.05)。由此可知,GBF1牛肉品质与云岭牛相似,且均较好。  相似文献

【目的】 试验旨在研究肌球蛋白重链3(myosin heavy chain 3,MYH3)和肌球蛋白重链13(myosin heavy chain 13,MYH13)基因遗传变异对猪肉质性状的影响。【方法】 利用北京黑猪背最长肌样本进行肉质性状(肌内脂肪(intramuscular fat,IMF)、水分、滴水损失、酸碱度(pH)、肉色L*值、肉色a*值和肉色b*值)表型数据的测定。利用PCR和Sanger测序技术对MYH3和MYH13基因启动子区和CDS区进行基因分型。将性别、场、日龄作为协变量,采用协方差分析,确定与猪肉质性状相关的SNPs,利用实时荧光定量PCR检测基因表达水平。【结果】 试验共筛选到9个SNPs,其中MYH3基因CDS区有1个错义突变(c.5782 G>C)与IMF显著相关(P<0.05),且MYH3基因表达水平与IMF呈正相关;MYH13基因CDS区有4个SNPs,其中2个(c.1923 G>A、c.1308 G>A)与肉色a*值显著相关,1个(c.963 G>A)与滴水损失显著相关,1个(c.237 G>T)与肉色L*值显著相关(P<0.05);MYH13基因启动子区有4个SNPs,其中2个(rs699287502、rs318639161)与肉色L*值显著相关,2个(rs321315318、rs330770991)与滴水损失显著相关(P<0.05),且MYH13基因表达水平与滴水损失呈负相关。【结论】 MYH3基因有1个SNP与IMF显著相关,且其基因表达水平与IMF呈正相关。MYH13基因中存在3个SNPs与滴水损失显著相关,且该基因启动子区2个SNPs基因表达水平与滴水损失呈负相关;3个SNPs与肉色L*值显著相关;2个SNPs与肉色a*值显著相关。以上SNPs均可作为影响北京黑猪肉质性状的候选基因功能位点。  相似文献

试验对云南地方云岭黑山羊和龙陵黄山羊羔羊肉的理化特性和风味品评进行研究。新出生的云岭黑山羊和龙陵黄山羊各16头用于本试验。试验山羊采用白天放牧、晚上补饲的半放牧饲养方式,补充饲料粗蛋白18.5%、代谢能12.5 MJ/kg。饲养150 d后屠宰云岭黑山羊和龙陵黄山羊羔羊各8头,取背最长肌分析肉品质。结果表明:宰后45min和24 h云岭黑山羊和龙陵黄山羊背最长肌的肉色评分、CIELAB L*、a*和C值差异不显著(P>0.05)。云岭黑山羊背最长肌的剪切力显著低于龙陵黄山羊(P=0.05)。云岭黑山羊背最长肌粗脂肪含量(P=0.03)、多汁性评分(P=0.03)和总体口感评分(P=0.04)显著大于龙陵黄山羊。本试验结果表明,云岭黑山羊羔羊肉与龙陵黄山羊相比具有较高粗脂肪含量和较优的风味口感。  相似文献

试验旨在研究日粮中添加红曲复合添加剂对肉鸡生长性能及鸡肉品质的影响。选用1日龄艾维因肉鸡400只,随机分为4组,每组设5个重复,每个重复20只鸡,Ⅰ组为对照组,饲喂基础日粮,Ⅱ~Ⅳ组为试验组,分别在基础日粮中添加红曲复合添加剂0.5%、1%和1.5%,试验期42 d,试验结束时肉鸡称重,每个重复选取2只屠宰,测定胸肌和腿肌肉质性状。结果表明,与对照组相比,Ⅲ和Ⅳ组平均日增重显著提高(P<0.05),料重比显著降低(P<0.05),但这两个指标在Ⅲ和Ⅳ组间无显著差异(P>0.05);各试验组与对照组相比,肌肉红度(a*)和黄度(b*)显著提高(P<0.05),滴水损失显著降低(P<0.05),肌肉亮度(L*)、蒸煮损失和剪切力差异不显著(P>0.05),Ⅲ和Ⅳ组pH24 h显著降低(P<0.05)。以上结果说明,日粮中添加红曲复合添加剂可以提高肉鸡生长性能、改善鸡肉品质,其添加量以1%为宜。  相似文献

This trial was conducted to study the effect of Monascus compound additives on growth performance and meat quality of broilers.The total of 400 one-day-old Avian broilers were randomly allotted into 4 groups with 5 replicates per group and 20 birds per replicate.The broilers in group Ⅰ(control group),were fed a basal diet,and those in experimental groups Ⅱ,Ⅲ and Ⅳ were fed the basal diet supplemented with 0.5%,1% and 1.5% Monascus compound additives,respectively.The experiment lasted for 42 d.At the ending of the experiment,all the birds were weighted and two of each replicate were slaughtered,the samples from breast and leg muscles were taken for meat quality measurement.The results showed as follows:Compared with control group,the ADG increased significantly(P<0.05),and F/D decreased significantly(P<0.05)in group Ⅲ and Ⅳ,but the differences were not significant between group Ⅲ and Ⅳ(P>0.05);Compared with the control group,the muscle redness(a*)and yellowness(b*)in all the experimental groups increased significantly(P<0.05),and the drip loss rate decreased significantly(P<0.05),but the muscle lightness(L*),cooking loss rate and shear force had no significant change(P>0.05),and pH24 h of muscles in groups Ⅲ and Ⅳ reduced significantly(P<0.05).In conclusion,adding Monascus compound additives in diets could improve growth performance and meat quality in broiles, and the appropriate level should be 1%.  相似文献

The assay was aimed to explore the beef quality and characteristics of Mongolia beef by comparative on beef quality and mineral elements of Mongolia beef and Simmental cattle.6 Mongolia beef and 6 Simmental cattle were chosen to collect the longissimus for analysis.The results showed that the color of Mongolia beef was wine-colored.The a* value, b* value, water holding ratio, cooked meat rate and shear force of Mongolia beef were significantly higher than Simmental cattle (P<0.05), and the drip loss rate and pH were significantly lower than Simmental cattle (P<0.05).The amount of Cr, Cu, Fe, Mn, Se and Zn were significantly higher in longissimus in Mongolia beef comparing to Simmental cattle (P<0.05), while the amount of P and I were significantly lower (P<0.05), and other elements contents were no significant difference (P>0.05).It suggested that the taste, juiciness and chromaticity of Kubuqi Mongolia beef were better and it had richer particle minerals than Simmental cattle, indicating that Mongolia beef had higher meat quality.  相似文献

试验通过对库布齐蒙古牛与西门塔尔牛肉品质部分指标及肌肉矿物质含量进行分析测定,研究库布齐蒙古牛的肉品质特性。选择库布齐蒙古牛与西门塔尔牛各6头,采集背最长肌进行样品分析。结果表明:蒙古牛肉色泽深红,红度a*、黄度b*、系水率、熟肉率、剪切力均高于西门塔尔牛,且均呈显著性差异(P<0.05),而失水率及pH显著低于西门塔尔牛(P<0.05);蒙古牛肌肉微量元素Cr、Cu、Fe、Mn、Se、Zn含量均显著高于西门塔尔牛(P<0.05),肌肉中P和I含量均显著低于西门塔尔牛(P<0.05),其他元素含量差异不显著(P>0.05)。说明库布齐蒙古牛肉口感、多汁性及色度方面较优,肌肉中大部分矿物质元素含量高于西门塔尔牛,肉品质较高。  相似文献

In this research,12 heads of 28 to 30 months (low months age group) and 8 heads of 32 to 34 months (high months age group) Xinjiang Brown cattle steers which fed in the same mode of nutrition were chose for the slaughter test,in which the carcass traits,nutrient composition and some edible quality index were measured and comparative analyzed,a research which through comparative analysis the carcass traits and meat quality of nutritional components of different months of Xinjiang Brown cattle steers was carried out.The results indicated that the marbling,carcass grade,fat,meat color of high months age group were better than that of low months age group,the traits of the low months age group on fat color,moisture,protein,cooking loss and shear force value were better than that of high months age group,and there were significant difference on the traits of fat and meat color L* between the two groups (P<0.05),while the differences of other traits between them were not significant (P>0.05);As high-grade beef,in addition to the traits of meat color and pH value of the chunk roll,tenderloin and striploin,each site of the meat traits on the fat,protein,moisture,cooking loss,shear force value indicators were all better than other parts,and showed the best of nutritional value and edible quality.28 to 34 months of Xinjiang Brown cattle steers could produce high-grade beef,the meat could be used as the raw materials of steak and boiled beef.  相似文献

选择相同营养模式下低月龄组(28~30月龄)12头、高月龄组(32~34月龄)8头新疆褐牛阉牛进行屠宰,分别对胴体性状、营养成分、部分食用品质指标进行测定和比较分析,旨在探索新疆褐牛阉牛生产高档牛肉的适宜月龄。结果表明,高月龄组大理石花纹、胴体等级、脂肪、肉色均优于低月龄组,低月龄组脂肪色泽、水分、蛋白质、蒸煮损失、剪切力值优于高月龄组,且脂肪、肉色L*值差异显著(P<0.05),其余组间差异均不显著(P>0.05);上脑、里脊、外脊作为高档牛肉,除肉色、pH外,脂肪、蛋白质、水分、蒸煮损失、剪切力值指标均优于其他部位,表现出了极好的营养价值和食用品质。28~34月龄阶段的新疆褐牛阉牛可以生产高档牛肉,其肉品都可作为牛排和涮牛肉的原材料。  相似文献
